Food and Child Nutrition Services’ biggest challenge is balancing nutritious choices while maintaining
student acceptability. No nutrition is gained if students do not consume what is offered to them. In light of
current trends regarding food and health, Dallas ISD Food and Child Nutrition Services has developed the
following guiding principles that communicate our commitment to providing healthy and quality meals to our
customers.
Mission
To provide well balanced meals and exemplary service to our students, parents and staff. We firmly believe
that “good nutrition fuels successful learning.”
Goals
• To plan, produce and serve quality meals based on nutrition integrity, science-based practices, USDA menu
planning requirements, federal and state nutrition guidelines, student acceptability, special diet needs,
and financial feasibility.
• To promote a healthy school environment with nutrition education from the cafeteria to the classroom.
• To enhance customer service and speed of service in areas of operation.
• To increase awareness of school nutrition programs and encourage meal participation from all students.
• To provide ingredient information and nutritional analysis of foods offered to students.
Values
• We value nutritious meals for academic performance.
• We value students’ preferences and overall customer satisfaction.
• We value the opportunity to provide nutrition education and resources.
• We value the health of our future generations of children.
We anticipate that parents will feel good about the new menu featuring wholesome and nutrient rich foods.
At the same time, we hope that students will learn how to make healthier choices and enjoy dining in their
school cafeteria.
5) The menu planning concepts have been revised to promote students selection of a variety of
healthier choices
• Elementary schools offer only one hot entrée choice in addition to a fresh salad, sandwich/wrap and
fruit and yogurt parfait.
• Utilize Healthier US School Challenge Certification goals and criteria, Alliance for a Healthier Generation
Guidelines, and Institute of Medicine Recommendations in menu planning.

El reto más grande de Food and Child Nutrition Services es ofrecer un balance entre opciones nutritivas mientras se
mantiene la aceptación de los estudiantes. No se obtiene ninguna nutrición si los estudiantes no consumen lo que se les
ofrece. A la luz de las tendencias actuales respecto a la alimentación y la salud, Dallas ISD Food and Child Nutrition
Services ha desarrollado los siguientes principios de orientación, que comunican nuestra dedicación de proveer alimentos
saludables y de calidad a nuestros clientes.
Misión
Proveer alimentos balanceados y servicio ejemplar a nuestros estudiantes, padres y personal. Firmemente creemos que
“la buena nutrición fomenta el aprendizaje exitoso.”
Metas
• Planear, producir y servir alimentos de calidad que ofrezcan una fuente de nutrición completa, usando prácticas
comprobadas científicas, usando los requisitos de planeación de menús del USDA, pautas de nutrición federales
y estatales, aceptación de los estudiantes, necesidades de dietas especiales y viabilidad financiera.
• Promover un ambiente escolar saludable con educación sobre nutrición, de la cafetería al salón de clases.
• Aumentar el servicio al cliente y la rapidez del servicio en las aéreas de operación.
• Incrementar la conciencia de programas de nutrición escolar y fomentar la participación de todos los estudiantes en
las comidas.
• Proporcionar información de ingredientes y análisis nutritivo de los alimentos ofrecidos a los estudiantes.
Valores
• Valoramos comidas nutritivas para el rendimiento académico.
• Valoramos las preferencias de los estudiantes y la satisfacción general de los clientes.

4) Usaremos productos menos procesados y de más alta calidad para las recetas
• Se usará tiritas de carne de pechuga de pollo.
• Se usará una carne para hamburguesa 100% de res en las preparatorias.
• Se elaboraron nuevas recetas que pueden prepararse con ingredientes frescos.
• Buscar y procurar productos que tengan un perfil de ingredientes simples y más naturales.
5) Los conceptos de planificación de menús han sido revisados para promover que los estudiantes
seleccionen de una variedad de opciones más saludables
• Las escuelas primarias ofrecen solo una opción de comida caliente principal además de una ensalada fresca,
sándwich/wrap y postre helado de fruta y yogur.
• Utilizar metas y criterio de Healthier US School Challenge Certification, pautas del Alliance for a Healthier
Generation e Institute of Medicine Recommendations en la planificación del menú.
