Bring to a boil. Reduce heat and simmer, covered, over low heat, 20 minutes. Cool uncovered, until thickened, about 10 minutes longer. Stir in jalapeno pepper. Season to taste with salt. 3. To prepare rice, combine tumeric and cumin in medium skillet. Heat over low heat, just until fragrant, about 30 seconds. Add water, rice and salt. Bring to a boil. Reduce heat. Cover and cook until water is absorbed and rice is tender, about 15 minutes. 4. To finish recipe, spoon rice into shallow bowl. Top with beans. Garnish with cilantro. Serve yogurt on the side.

Serve immediately.

Instructions : 1. Set oven to 350 2. Cut pumpkin into chunks. Remove seeds and strings, peel the skin then slice the flesh into 2-inch pieces. 3. In medium skillet, heat oil and brwon the pumpkin for 5 minutes, turning frequently, or until golden brown. 4. Transfer pumpkin to roasting pan. Sprinkle with sugar and cinnamon, cover with foil and bake x 30 minutes until tender. 5. Yogurt sauce: stir together yogurt, 1 garlic clove and salt. Set aside. 6. Fake meat sauce: Heat oil and cook onions until browned. Add fake beef, garlic, salt and pepper and stir. Add tomato sauce and water. Bring to a boil, lower heat and simmer x 20 minutes or until it becomes thick. 7. Serve: spoon yogurt sauce onto a plate, add wedge of pumpkin and place meat sauce on top.
