1 If you’re a foodie, eating for a living and getting paid for sampling the finest cuisines
may sound like a dream job. Rebecca Chan sat down with a secret restaurant reviewer
and spoke to him about one of the most mysterious jobs of the dining industry.
2 What exactly do you do as a secret restaurant reviewer? ‘I visit selected restaurants
5 to sample their dishes and rate their recipes without the owners, chefs or staff knowing
about it. I then write reviews and, sometimes, give ratings based on the food quality and
presentation, cooking techniques, harmony of flavours and uniqueness, etc.’ Joseph
Yip explains.
3 Why keeping it secret? ‘I don’t want any special treatment. I’d like to get the same
10 experience that any diners would have. This helps me provide a trusted opinion of the
restaurant.’
4 What made you want to become a secret restaurant reviewer? ‘I decided to be one
because I’m a food enthusiast. I mean, I’m really, really into food. I also have a
passionate interest in the culinary world,’ he grins. ‘But make no mistake, restaurant
15 reviewers are not only a bunch of foodies. Many of them whom I know are food experts
and they have lots of experience working in the dining industry. Prior to this job, I
worked for 11 years in the hotel and catering business.’
5 What else do you need to do the job? ‘Before I started working as a reviewer, I went
through extensive training to learn how to observe and evaluate a restaurant,’ says
20 Joseph. ‘Most importantly, one must be observant to take note of all the details in the
dining process as well as open-minded to embrace the diversities of cuisines. You also
need good planning before stepping into a restaurant.’ He further explains, ‘First, I
carefully put together a list of any potential businesses for review. Then, I do a lot of
research on each of them. Lastly, I discuss with other reviewers in my team to decide
25 on the final restaurant to visit.’
6 Do you taste everything on the menu? ‘Oh, I’ll explore the menu, but I can’t order
everything on it. So, I usually try out some of the main courses and the signature dishes
that are uniquely created by the restaurant,’ he adds.
7 What’s the toughest part of your job? ‘When I visit a restaurant, I have to behave like
30 any normal diners as much as I possibly can. It’s quite challenging to be “secret”,
especially in a world where we’re all sharing our activities and interactions on social
media,’ says Joseph.
8 What was the most unusual recipe you’ve ever tasted and reviewed? ‘I once had a
large spicy, bland-looking sausage. It was made with minced sheep heart, lungs and
35 liver. Everything was stuffed in the animal’s stomach and then boiled for about three
hours. I must say it was a very memorable culinary experience,’ he laughs.

Olivia: First of all, good eats start with healthy ingredients.

Olivia: To start with, use healthier cooking oil, such as olive or canola oil.

small pieces. Then, cook them in a microwave oven. Lastly, lightly brush the

fish or chicken. Just let them gently simmer in a small amount of liquid. It can
