Explain why the producer of an outstanding quality Chardonnay from Russian River Valley AVA might
choose to use malolactic fermentation.
1. lower the acidity level. Russian River Valley is located in Sonoma county, it is greately influenced by cool
sea breezes and fogs through Petaluma Gap.
Cool climate often helps retain high acidity and herbaceous aromas in chardonnay if MLF is prevented. MLF
is a process in which the malic acid is transformed to lactic acid, thus the acidity level is greatly decreased.
2. create a round and balanced texture. Through MLF, the acidity level is reduced and lactic acid is softer
and rounder than malic acid, thus much more creamy, buttery flavors are created to match the fruit
flavors.
3.the potential to age further. MLF creates a round and balanced wine which is more stable for further
ageing especially in oak barrels. Meanwhile, Maturation in oak barrels leads to complex flavors.
4. price and consumer preference.
Chardonnay with MLF or oak matured has various and complex flavors than those easy-drinking wines, and
the price is often much higher considering the sophisticated winemaking process. Moreover, some
consumers particularly American consumers prefer rich flavored chardonnay. By employing MLF,
winemakers can cater to buyers' tastes and meet market demand
