present)

HISTORICAL BACKGROUND (DEVELOPMENT OF BEVERAGE INDUSTRY)


According to records, the beginning or the development of Hospitality industry ingeneral and the
Beverage service industry in particular can be traced back to the time ofSumerians. Although some
civilization exists together with the Sumerians in otherplaces, Sumerians were able to come up with a
written record of their civilization. Andduring their time they were considered the most progressive
group of people.

Ancient Sumeria/Sumeria 4000 BC

Some part of Sumeria is the present day IraqSumerians were skilled:

1. Traders

2. Farmers

3. Craftsmen

Taverns

Were places serving beverage particularly “Ale” and places for social Gatherings.

Development of Beverage Industry in the Philippines

In the Philippines,San Miguel Corporation pioneered the development of theBeverage Service Industry.

1890 - Founded by Don Enrique Maria Barretto de Ycaza in the San MiguelDistrict in Manila, the La
Fabrica de Cerveza de San Miguel, the 1St Brewery inSouth East Asia.

1913 - It became a corporation and began exporting beer in Guam, Hong Kong and Shanghai

1922 - The year which started producing soft drinks at the Royal Soft drinks Plant
1925 - The year that started producing ice cream at the Magnolia Ice cream Plant

1927 - Started bottling of Coca Cola in the Philippines

1938 - Entered the glass industry, supplying the company’s bottling needs

1963 - San Miguel Brewery was renamed San Miguel Corporation, the largestfood ,beverage and
packaging company in the Philippines.

Today’s Beverage Service Industry

- Vodka, tequila and a host of liquors/liqueurs became part of the scene

- Americans became wine drinkers

- New equipment were introduced (dispensers, cash registers)

- More women became wine drinkers

- Liquor serving in restaurants and bars were accepted a a normal part of the culture

Types of Today’s Beverage Service Establishments

1.Beverage-Only Bar

It serves beverage alone with no food, beyond snacks. This type of bar isusually located near bus
terminals or stations. Serves beer, wine and mixed drinksand usually no chairs for the guests for the
intention of not staying longer.

2. Bar/Entertainment Combination

The bar offers drinks and a range of entertainment which includes:

- Dancing: disco, ballroom


- Singing videoke
- Sports
- -Live performances/live bands
- Stand-Up comedy
- Fashion show
- Striptease
- Piano music

3.Food And Beverage Combination

Serving food with beverage usually with some kind of food service

Examples:

A. Bar and Restaurants

- Food and drink can be served at the same time orguest can have their drink before dining.

B. Service Bars

-Used to prepare drinks for the dining guest

4.Hotel Beverage Operation

Three or more bar in one roof with different purposes and ambiance.

-Cocktail Lounge/Piano Bar

- Restaurant Bar/Service Bar

-Guest can order any drink available in the bar andusually the guest pay for his order.

Limited Bar set -Up

- Only the drinks allowed by the host will beserved to the guest.

Serves as a place for business meeting and transaction usually in a small roomor restaurant where
beverages and light meal are served often caters chiefly towomen and the place has a sedate or
subdued atmosphere.

10.Taverns

Caters mostly to men for business meeting and gather to drink alcoholicbeverages and more likely
served food.

11.Public Houses/Pubs

A drinking establishment which serve alcoholic drinks especially beer that canbe consume on the
premises and usually with a homely set up.

12.Brew Pubs/Micro Breweries

A place where brewed beer are served on the premises.

13. Nightclub/Clubs
A place for drinking, dancing and entertainment which does its operation afterdark

14.Internet Café/Cyber Café

One can use a computer with internet access for free; it may or may not serveas a regular café with
food and drinks being served.

15. Beer Garden

An open area where alcohol is legally serve.
