Pasta With Mixed Herbs n Cream Wish you all a wonderful New Year 2012.. Pasta with Italian herbs …in cream..Yummy, right? Yeah, a bit heavy but a sure-fire kids pleaser. And this would take hardly 5 minutes to prepare. You can use fresh Italian herbs if you have it, great way to increase the flavor. Very healthy preparation, very delicious… Let’s start.. Ingredients Wheat Pasta-1 cup Mixed Italian Fresh Herbs-I used Thyme, Rosemary and Oregano-2tsp altogether. (Try to include fresh Basil leaves, since it brings the real flavor of the cuisine.) Easy Vegetable Rice~kids recipe

This is a quick and simple biriyani or very healthy, vegetable rice. My son was told to bring vegetable pulao for a potluck kid’s party. I made this item for the kids. They enjoyed it, since it’s less spicy and having an appealing smell of Mint leaves and other spices. This is nicer when it’s cold, so u can even send this in the lunch box for the kids who like rice. Ingredients Vegetables-Carrot, beans, corn, Onion, Tomato, Cabbage-1/2 cup Rice-2cups Ghee-2tsp Oil-1tsp Mint leaves-1/2 cup Yogurt-1tbsp Ginger-garlic-green chili paste-1tbsp Salt-to taste Sugar-1tsp Saffron-4-5 strands (Optional) Cashews, Raisins- Black Cardamom, cloves, Fennel seeds, Cinnammon-Powdered 1-2 tsp Method Cook rice after adding water just to cover it. Mushroom Pepper fry is a very simple and quick recipe. You can have this with Fried Rice . Try this method and enjoy the fabulous taste at home. Cleaning mushroom in proper method is the most important part. Coat the mushrooms with some salt, turmeric and all purpose flour. Keep aside for 5 minutes. Now wash them under running water.  This is to remove any poisonous substances from it. Now boil 1 cup water, add salt and turmeric powder. Put the cleaned mushrooms in this water for 2 minutes. Now mushrooms are ready to cook. Ingredients Cleaned Mushroom-1 cup Pepper powder-1tbsp Salt-to taste Curry leaves- Onion-1 big finely chopped. Fish Curry-South Kerala Style

This is a very delicious fish curry from the southern region of Kerala. This recipe I got from a cookery show. I am trying to stick to the original recipe since it’s a recipe inherited from ancestors. This is a bit different from the usual fish curry. Try this one with any fish that’s available to you and enjoy this lip smacking curry!! Ingredients King fish-1/2 kg Ginger-1 tbsp Onion/Shallots-1/2 cup Kokum-12 no’s Turmeric powder-1/2 tsp Coconut-1 cup Dry red chili-10 no’s Coriander seeds-1/4 cup Method of preparation Step1 Clean the fish. In a heavy bottom vessel, pour 1 cup of water(or the water enough to cover the fish). Boil the water with Kokum (U must use 10-12 no’s), curry leaves, salt and turmeric powder. When it starts boiling add fish pieces and cook  on medium fire. After the fish is fully cooked, you can remove the Kokum from the gravy. Step2 Dry roast coconut on a dry pan. Vegetable Fried Rice

Veg.Fried Rice Chinese Fried rice is quick and easy to cook and every one’s favorite too. This is a basic recipe for fried rice. You can add in eggs, shrimp, sausages or chicken to this, according to your taste buds. Ingredients Cooked rice- 2 cups Mixed vegetables-1 cup Spring Onion/Scallions-1/2 cup Red chili-2no Garlic-1 finely chopped Ginger-Julian cut 2 tsp Salt-to taste Worcester  sauce-2 tbsp How to do Heat a wok, add 1 tbsp oil. Add in red chili flakes and garlic chopped. Add ½ cup scallions,ginger and 1 cup mixed veggies. (I prefer French beans, carrots, bell pepper, mushrooms) Saute  well and stir fry. Add the cooked rice, salt and  Worcester  sauce. Now mix well and close the wok and ke ep it on medium fire for 10 minutes. Garnish with spring onion. Serve hot with any side dish you prefer.

Paneer Butter Masala

Paneer in Hindi means Cottage Cheese.  “Paneer Butter Masala”is rich and creamy. You can serve it in Kids Party, since it’s mild and a bit sweet if you are following my recipe. You can also make it spicy, the choice is yours. This recipe is almost similar to Butter chicken in taste. This recipe, is again, very simple since, I like to cook very fast and simple, I had to find out a short cut for this. Try this out; it tastes the same as the one we get from restaurants. Ingredients Cottage cheese or Paneer – Cut into cubes-250 g Cashew nuts-25g Onion-2 medium Tomato-2 medium Green chilly-1no Ginger-Garlic paste-1tsp Cumin powder-1tsp Kasuri methi or dry fenugreek leaves-bountiful This flavor should be more in the curry. This is the Fish curry I made at home the other day..just tried and came out good…So going to call this , deepsrecipes special Fish Curry, if you all permit me to call so.... Very simple recipe..But extremely tasty..A bit tangy, that’s how my family likes it... Ingredients 1. King Fish-1/2 kg 2. Onion 2 –Medium Finely Chopped 3. Ginger-Garlic –Finely Chopped 1 tsp 4. Turmeric powder-1/2 tsp 5. Chilly Powder-2 tsp 6. Coriander powder – 11/2 tbsp 7. Green chilly- 2 no 8. Pepper powder-2 ts 9. Kokum- 3 small 10. Salt-to taste 11. Vinegar- 1 tsp 12. Curry leaves /Cilantro-bountiful Method of preparation Clean the fish with Salt and vinegar. Marinate with a tsp of chilly powder, 1/2 tsp turmeric and salt. In a non stick sauce pan, pour 1 tbsp oil. Lightly fry the marinated fish pieces. Now remove them from the oil. Lamb Keema Kathi Roll   Kathi rolls are fast food popular in the Northern part of India. I had tried Paneer(Cottage Cheese) Kathi rolls, and   thought to prepare it at home, with Mutton/Lamb Keema. Keema is the minced Lamb or meat. This is very simple and extremely delicious!!!   Method of preparation For Lamb Keema Minced Lamb-400 g Ginger -garlic-green chilly paste- 2 tbsp Onion-2 no Tomato- 1 big Cloves, Cardamom, Fennel seeds, black cardamom-All powdered together-2 tsp Salt –to taste Red chilly powder-2 tsp Coriander powder-1 tbsp Pressures cook all the above ingredients after mixing thoroughly. You can add ½ cup water also. After   4-5 whistles ,Keema gets cooked. Now open the cooker and you can evaporate any excess water. Now add 2 tsp oil and fry this mix in the same cooker. Make it more elegant with a mouth melting dessert .Coffee flavored, rich and creamy Tiramisu w ith crunchy walnuts and cocoa powder on top.Perfect end to a wonderful  meal. Easiest recipe ever.This is the eggless version . Here we go. Ingredients Lady Finger Biscuits - 10 nos Mascarpone cheese/Any cream cheese - 1/2 cup Fresh cream-1 cup Sugar  - 1/2 cup Walnuts Cocoa powder. Method Of Preparation Make a cup of strong coffee and cool it. Beat  fresh cream very well until you get stiff peaks. Now add cream cheese and beat well to make a smooth fluffy mixture .Add some coffee to this.Mix well . Now dip lady fingers in coffee and arrange them into a layer  in a rectangle dish .Start to distribute the cream to get a cream layer. Repeat the step with biscuit and cream .Now top with cream. This is my version of eggless chocolate cake, after trying all those recipes by others. Step 1 Dry Ingredients Cocoa powder    --- ½ cup All purpose flour – 1-1/4 cup Baking powder - 1 tsp Baking soda   - 1 tsp Salt                 - ¼ tsp Whisk dry ingredients together with a fork. Chop Suey(Only Veg)

Classic American chop suey consists of elbow macaroni and bits of cooked ground beef with sautéed onion and green pepper in a thick tomato- based sauce.Though this decidedly American comfort food is clearly influenced by Italian-American cuisine, it is known as a chop suey because it is a combo meal with meat and vegetables.  But my recipe is Chinese-American C hop Suey with only vegetables and Noodles instead of Pasta. You can add chicken or meat and chicken stock instead of vegetable stock. ( Chop suey has become a prominent part of American Chinese cuisine , Filipino cuisine , Canadian Chinese cuisine , Indian Chinese cuisine , and Polynesian cuisine . Ingredients Bread -6-8 no Onion -1 no Potato- 1 no Green chilly- 2nos Turmeric powder-1/4 tsp Chilly powder -1/4 tsp Salt- To taste Asafetida-a pinch Method Of Preparation Cut the bread into pieces. Boil 1 Potato .Peel and cut into pieces. Heat oil and add mustard. When it starts popping, add asafetida and curry leaves. Add turmeric powder and chilly powder. Sauté well. Now add chopped onion and green chilly. Add salt to taste. Now add potato and bread pieces .Drizzle some water, and mix well. This Upma can be served with tomato ketch up and kids would love this. You can use whole meal bread to make it healthy.  Serve hot.

Kerala Fish Fry(Pepper Fish Fry)

 The cuisine of KERALA is very rich and has roots in the History, with a myriad variety of both vegetarian and non vegetarian dishes.  Kerala food has a big role in attracting  tourists to Kerala as much as its scenic beauty. Today’s recipe is authentic Kerala Fish Fry using whole pepper corns. This recipe is inspired by the “Karimeen Pollichathu” (fish fry in banana leaf); we got from Kumarakam house boat.
