Would you like a cake or a drink?🤩

WHIPPED GANACHE:
225 g cream 35%
25 g Glucose
25 g Inverted sugar
305 g white chocolate 35%
580 g cream 35%
Heat the smaller portion of cream, the glucose and the inverted sugar.
Gradually pour the hot mixture over the partially melted chocolate.
Using a hand blender, mix to make a perfect emulsion.
Add the larger portion of cold liquid cream.
Blend again.
Leave to set in the refrigerator for 12 hours.
Whisk until the texture is consistent enough to use in a piping bag or with a spatula.

*** NOTE: for a tastier ganache, add vanilla
