This Easy Çiğ Köfte Recipe is a vegan twist on the popular delicious Turkish street food from Urfa, a city in southeastern Turkey. It also makes a great appetizer or meze and is similar to Kibbeh Nayyeh from Levantine cuisine. Çiğ Köfte (pronounced chee kofta) literally means "raw meatballs" in Turkish. Traditionally, it's made with raw ground meat, bulgur, tomato paste, and various spices. My version is entirely meat-free, effortless to make with a stand mixer, and just as flavorful.
