Crazy Crust Pizza
I was really intrigued by this pizza - initially because of the name. Why is the crust crazy? Then reading the method behind it and I was like...okay this is a little crazy! You have a liquid batter and the meat goes onto it before the crust bakes?! Then comes pizza sauce and cheese. I reserved judgment until it was made and I had no problems whatsoever. It turned out beautifully and we all really enjoyed it. I mean, it was so easy and the crust was really yummy. The original recipe maker said they do different toppings all the time, so it doesn't have to be this specifically - try whatever combo sounds good to you!

Asparagus, Bacon, & Herbed Cheese Pizza
The perfect springtime pizza with asparagus, bacon, and dollops of rich herbed cream cheese!
I have found many recipes lately with a little cream cheese in them and I don't know what it is but I'm obsessed with it. I have always been a light on the sauce for pizza person, and I find that I really love pizzas that don't have red sauce (and I use pasta sauce for pizza sauce and I love pasta sauce). This pizza has olive oil and I love that the toppings are so simple but so delicious. I love the asparagus and bacon. Plus those little dollops of cream cheese - yum! That bit of super rich savory flavor is fantastic.Wednesday, January 20, 2021
Prado's Flatbread Copycat
Check out the Mexicali and Blanca flatbread pizzas inspired by a restaurant in San Diego.
One of my favorite things to do (if you didn't know by now) is to come up with copycat recipes of foods in restaurants or that I've seen on the internet. This particular recipe is from a restaurant in San Diego called (The) Prado. My husband spent 2019 traveling to San Diego for work and he loves it. He actually lived there when he was really young for a few years and so it's a bit nostalgic for him too. One of his favorite foods he ate (outside of all the amazing Mexican food) was the Mexicali flatbread pizza at Prado. He sent me a picture of the menu and I immediately went to the Blanca flatbread pizza with goat cheese and spinach. As I have not had these pizzas and cannot speak to how close the recipes actually are...these are just loose copycat recipes that I made on what little information was given on the menu. Both were crazy delicious.

Cheesy Pizza Roll
This stromboli has loads of cheese with pepperoni and salami inside and is topped with garlic herb butter.
I fall prey to the Facebook cooking videos, but thankfully, I've had pretty good luck with them. This one was from Tasty and it's basically a stromboli and that's what they refer to it as in the directions. I personally think my favorite part of this recipe and one that makes it stand out from similar recipes is the garlic butter that has herbs in it. I've gotten into using mini pepperonis instead of chopping larger ones or having whole pepperonis fall out when you're trying to get a bite :)

Copycat Marion's Pizza
This pizza copycat is straight out of Dayton, Ohio - an okay imitation at best - the real thing is too good!
When I had first met my husband, all I heard about was this amazing pizza place in Ohio called Marion's Piazza (and Skyline too). We met in 2004 and it took me until 2016 to actually go to Marion's and have this infamous pizza. In particular, my husband's favorite is the one with Italian sausage and banana peppers. It's a thin crust pizza that's cut into squares. Marion's crust reminded me a lot of the pizza crust at my childhood favorite pizza place, Pizza Ranch. :) I'm still trying to find a good thin crust recipe that tastes like the ones at restaurants and it's driving me bonkers.

Pesto Prosciutto Pizza
So many dream ingredients on one incredible pizza: pesto, prosciutto, feta, mozzarella pearls, and kale!
I kinda love how puffy my pizza crust got here but I think I finally found my happy medium pizza crust. I used the same ole recipe that is my tried and true - split the recipe in half, as you are supposed to do - and instead of prebaking it, I put the toppings on and then bake the crust just once. It keeps it from getting out of control puffy, so it's a thinner crust, but it's not so thin that it feels like you are eating cardboard.
Anyways, here I am sharing another recipe with pesto. I love love pesto and I was super excited for this recipe. It did not disappoint. I loved the salty prosciutto and the tangy feta. Also, mozzarella pearls are my favorite way to get mozzarella on my pizza. I love how gooey and melty they get! And kale! AH! This pizza has so many good parts to it and I adored it.

Jalapeno Popper Pizza
This pizza is super quick to throw together and tastes just like a jalapeno popper!
I had to make a few adjustments to this recipe that makes it similar to one I've posted before. Nick does not and will not eat ranch dressing. I'll be honest and say that I was sure he would eat it with the cream cheese as the "sauce", but I took a chance. I'm glad I did and used whipped cream cheese and ranch dressing seasoning mix in place of the heavier ranch dressing to regular cream cheese ratio. I chose to dice my jalapenos to cover more surface area and I used bacon bits instead of cooking bacon and crumbling it...because I'm lazy. This is a really quick pizza recipe to throw together and I do appreciate that some Fridays when I'm just tired and done and ready to relax.

Zucchini Pizza Bites
A bite of pizza atop zucchini slices is the perfect low carb snack.
Nick did the keto diet last summer and when we decided to have a junk food/fried food night, I was at a loss for what to make that wasn't breaded. This was an easy pick that fit the low carb category and was relatively inexpensive to make. I love zucchini, so I was game for this recipe. No, these aren't bagel bites, however, they are still delicious little pizza treats.

Grilled Chicken and Bacon Pizza with Garlic Cream Sauce
Pizza has never tasted so good with this garlicky sauce, grilled chicken, and bacon!
I don't make a lot of chicken pizza simply because a lot of the bases are ranch and the boys will not eat ranch period. This pizza recipe caught my eye because of the garlic cream sauce. I am definitely one of those people who puts 8 to 10 cloves worth of garlic into most recipes because I love garlic. Thankfully, Nick and the big kids do too. You can never go wrong with bacon too, so I knew this would be a keeper. I opted for the wine for the sauce and used a pinot grigio and it was fantastic.

Easy Pesto Pizza
This pesto pizza has only a handful of toppings, but don't underestimate the tastiness!
I don't usually purchase store bought pizza crust. I much prefer to make a batch of my favorite pizza dough and freeze half. Then it's just a matter of thawing the crust during the day in preparation for dinner. I love this easy pesto pizza because it truly is easy. And there's pesto. And then more basil. This speaks to me on so many levels. The original recipe calls for topping the pizza with just mozzarella and then baking, then adding the remaining toppings after baking. I prefer the toppings get melted into the cheese, so I baked it all :)

Mexican Chorizo Pizza
Only five ingredients to this pizza that is perfect for Taco Tuesday!
Taco Tuesday can have pizza now too! This pizza is super simple and consists of crust, sauce, cheese, onion, and chorizo. Which makes it the best kind of pizza because it doesn't have to take a lot of effort or ingredients to make a delicious meal. You could absolutely adapt this recipe - maybe dip your slices in guacamole or add diced tomatoes and jalapenos - the sky is the limit. It is simply wonderful just the way it is. You can buy a premade crust or use pizza dough (homemade or store bought).

Spinach Pizza Dough
I am very fortunate to have kids (or at least the two oldest kids) that are pretty okay with most vegetables. They like kale, love broccoli, and will even tolerate brussels on occasion. They'll eat fresh spinach salad. So I don't ever really have to sneak vegetables into anything.
They did give me some really questionable looks when I made this recipe though. They did not get the need to add spinach to pizza dough. However, thankfully, the side eyes stopped when they ate their pizza and couldn't taste the spinach. The recipe itself is actually very similar to my go-to pizza dough recipe and I think that's how I got away with it. I thought it was a great pizza dough. I mixed it by hand but will try my stand mixer next time!

Bacon BBQ and Mango Pizza #SundaySupper
Did y'all know that October is National Pizza Month?! I didn't either until this week's Sunday Supper Movement event theme was announced. We are celebrating with our NATIONAL PIZZA MONTH event hosted by Coleen of The Redheaded Baker.
I chose to share this pizza that was probably my first recipe I've ever made with fresh mango. I personally love pineapple on pizza and I knew I would love mango on pizza too. I thought pairing mango with barbecue sauce and bacon was a genius idea. I saved it while looking for a recipe to make for a Secret Recipe Club assignment from one of my favorite bloggers, The Spiffy Cookie. Erin has another spicy fruit pizza on her blog that I love, so I knew this one would be a keeper. It was incredible. Everything worked together so well.

Pizza Buns #SecretRecipeClub
It's time again for Secret Recipe Club reveal day for my group, Group C! What is Secret Recipe Club? It's a bunch of food bloggers separated into three groups that post once a month on a designated Monday. Each month, we are paired with another foodie from our group secretly (hence the name). We then pick a recipe (or two or more) from that blog and make it. On our reveal day, we reveal whose blog we had and what recipe(s) we chose all at the same time. It's like a Secret Santa every month, but with food and blogs! It's a great deal of fun :)
This month I had the pleasure of being assigned to Our Eating Habits run by Jamie. Jamie is a homeschooling mom of three who loves Christmas and Disney (can't say I blame her there! Two of my favorite things) plus she also has an epic mug collection to enjoy her morning coffee in. Although I've had to switch to decaf, my mug collection is what I would call epic too. It's honestly a problem for me to refrain from picking up new mugs - my coffee "hutch" doesn't have any room left in it.
I had absolutely no problem finding a recipe I wanted to make from Jamie's blog and I had actually put 4 or 5 on my meal plan for the month of June. So let me just share what made the list! There is the Saucy Pepper Steak which is a stir fry, Italian Meatball Heroes are actually our planned dinner for tonight, and I am always saving new chocolate chip cookie recipes, like this Biscoff Chocolate Chip Cookies recipe. Then there are these yummy Shepherd's Pie Loaded Baked Potatoes, Biscoff Muffins, and Nestle Delightfull Soft Peanut Butter Cookies. Honestly, I was really on a Biscoff kick...here's a third recipe: Biscoff Granola Bars. I know it isn't time for pumpkin yet, but I still saved this Double Pumpkin Poke Cake. I need to make this Butterscotch Swirl Cake and the Raspberry Dutch Baby.
Ultimately, I went with the Pizza Buns - although coincidentally I put her Mozzarella Caprese Omelets on my meal plan and was pleasantly surprised when I opened it up on my tablet to make it. That recipe will be posted at some point, but as I've said, today is all about the Pizza Buns. I immediately was drawn to them because it reminded me of something my elementary school served up for school lunch every once in a while. It was easy to make and a huge hit with the whole family! Just look at all that ooey gooey cheese! YES!
