Slow Cooker Chicken Taco Meat

This is a great multi-purpose recipe.  It's a simple chicken recipe that can be cooked all day, in a slow cooker, while you are out of the house.  Best of all it can be used for so many meals.  Don't feel like tacos?  Try taco salad, burritos, taquitos, or just serve over rice.  You could even make a soup just add some frozen veggies, maybe beans, and chicken broth.  I only made enough for about 4 servings, but I'd suggest doubling or tripling the recipe so you can cook once and eat all week.  You can use the chicken as the base for a different meal every night.  I love multi-use recipes.

Slow Cooker Chicken Taco Meat


Servings:  4
Cook time:  5-8 hours in slow cooker

Ingredients:

1 pound boneless skinless chicken thighs
Salt & pepper
1/2 cup salsa
1 Tbsp garlic powder
1/2 Tbsp onion powder
1 Tbsp paprika
1/2 tsp cumin
1/8 tsp cinnamon (optional)
*or 2 Tbsp taco seasoning
Juice of 1 lime
Habanero flakes or hot peppers to taste (optional)

Slow Cooker Chicken Taco Meat:  A simple slow cooker recipe of chicken cooked in salsa and spices.  Great for tacos, taco salad, burritos, or even over rice.


Place thawed chicken thighs in the bowl of a slow cooker (you can use frozen it just takes a little longer to cook).

Season with salt and pepper then add the salsa, spices(*use individual spices or your favorite taco seasoning blend), and lime juice.  Stir until well combined and chicken is thoroughly covered.

Cook on low for 5-8 hours (or high for around 3) until chicken is tender and shreds easily.

Stir the shredded chicken and any leftover cooking liquid well.  Then remove chicken with a slotted spoon.

Add the chicken to whatever meal you like.  I made taco salad because, as you all (I really want to use my native NC colloquialism "all y'all"...usually accompanied by an all-encompassing hand motion) should know by now, it's my favorite.

I was first introduced to this recipe when I was in college (what better place to have some easy recipes up your sleeve).  This recipe is perfect for a simple dinner.  It's also a crowd favorite at parties and perfect for gamedays.  This is a great recipe for beginner cooks or anyone who doesn't have a lot of time to prepare dinner.  The ingredients are added to a slow cooker and can cook while away at work.  I don't know anyone who doesn't like this chicken it pleases even picky eaters.

Servings:  6

Ingredients:

2-3 pounds boneless chicken
2 cups barbecue sauce

That's it.  Seriously, only 2 ingredients.

Place your thawed chicken in the bottom of a slow cooker.  Pour about 2 cups of your favorite barbecue sauce on top (enough to cover the chicken).

Turn the slow cooker to low and cook for about 5-8 hours until chicken is cooked.  Using 2 forks shred the chicken right in the cooker and mix well with the sauce.

Put the chicken on a bun and serve with sides of your choice.  It's great with slaw or Moroccan Raw Carrot Salad.

I like to make homemade buns (try Best Burger Buns) and barbecue sauce, but this recipe works great with store bought too (and it is that much simpler).

Slow Cooker Moroccan Chicken

My husband had a sore muscle.  Not just the kind you get from regular exercise (he's very active and not one to complain), but one like a tweak or a strain.  It was bothering him for a while so on top of resting, icing, and taking NSAIDs (non-steroidal anti-inflammatory drugs) he also wanted to eat anti-inflammatory foods.  This is where I came in and looked up some information online.  For an anti-inflammatory diet, foods low in saturated fat are good.  So are vegetables, fruits, whole grains, and spices.  Spices like cinnamon, ginger, turmeric, and chili pepper are all supposed to be anti-inflammatory.

Moroccan dishes often include many spices so I looked up common Moroccan spices.  Then I made a Moroccan spice blend with plenty of spices said to have anti-inflammatory properties.  (It's a good thing I love spicy foods and Indian foods because I have a huge cabinet full of spices so I had everything on hand.)  This spice blend was the main inspiration for this dish.  I just added veggies, chicken, and a few other healthy ingredients then cooked it all in a slow cooker for a simple and nutritious meal.

This was not a miracle cure for my husband's pain.  I won't make any unbelievable claims.  We ate anti-inflammatory foods for a couple of weeks (we still include many in our regular meals) and maybe they helped or maybe they didn't.  I just think eating healthy and flavorful foods is never a bad thing.  Most importantly we really enjoyed this meal and will make it again (sore muscles or not).

Moroccan Chicken

Cook time:  6 hours
Servings: 8

Moroccan Spice Mix:

1 tsp ginger
1 tsp cinnamon
1 tsp ground coriander
1 tsp paprika
1/2 tsp allspice
1/2 tsp ground cumin
1/2 tsp turmeric
1/4 tsp hot red chili powder (cayenne is fine)

Ingredients:

1 large onion, chopped
1 carrot, chopped
3 celery stalks, chopped
2 Tablespoons Moroccan Spice Mix
1 chicken, separated
1 bunch cilantro stems (reserve the leaves for garnish)
1 cinnamon stick
2 star anise
1 can diced tomatoes
1 can chickpeas
1 cup raisins (optional)
1/2 cup olives, chopped (optional)

First prepare the spice mix by stirring all the spice together in a small bowl.  This makes about 2 tablespoons of spice mix and I used it all in this recipe.  Set aside.

In a 5 quart slow cooker, add the vegetables and season with salt and pepper (I use coarse sea salt and use a few pinches, a few grinds of freshly ground black pepper)

Sprinkle on the spice mix and add the chicken (I bought a whole chicken and had the butcher separate it into 10 pieces--breast (each cut in half), legs, thighs, wings).  You could also use boneless skinless breasts or thighs, whatever you prefer.  Make sure to season the chicken with salt and pepper too (a few pinches).

Then make a spice bundle using cheesecloth.  Unfold a square of cheesecloth and place the cilantro stems, cinnamon stick, and star anise in the center.  Then tie the cloth up around them. This just makes them easier to fish out after cooking and imparting their flavor.  Toss this packet into the slow cooker.

Add the can of tomatoes, chickpeas, and 2 cups of water.  You can probably add the raisins and olives now, but I didn't think about it until the end of cooking.

Cook on low for 6 hours or until the chicken is fully cooked and tender.

Serve with brown rice and garnish with cilantro (I had roasted cauliflower and broccoli on the side--more vegetables never hurt).

Lemongrass Chicken Vermicelli

I make vermicelli often for dinner.  It's a simple, fresh, and filling salad with bean sprouts, lettuce, rice noodles, carrots, mint, basil, cilantro, green onions (as many vegetables and herbs as you like), and some type of protein.  My usual favorite is Char Siu (BBQ pork) Vermicelli because I almost always have store bought Char Siu in the freezer which makes this salad super simple.  I've also used all types of meats/protein like leftover steak, chicken, tofu, shrimp, and I even used fish sticks once.  I love this salad because it makes a delicious, healthy, versatile, and simple meal.  With just a little prep work, this salad is ready to throw together in minutes.

When I made this version of vermicelli I wanted to try something new and thought of lemongrass chicken.  Lemon grass is easy to find in Chinatown and many grocery stores it's also easy to grow.  It's a grass that smells wonderfully of lemon.  What you usually find are just the stems.  When using it for cooking I just use the bottom thickest white part of the stalk and mince it.  There are instructions on how to prepare lemongrass in my How to Make Lemongrass Green Tea as well as instruction on many sites (just google it).

Lemongrass Chicken Vermicelli:  A stalk of lemongrass.

I used skin-on chicken breasts, marinated in a salty, sweet, and sour sauce flavored predominately with lemongrass.  The lemongrass added a lovely subtle lemony flavor to the chicken that you can't get from an actual lemon.  It's difficult to describe, but it was delicious.  The only criticism I have is that the marinade did not permeate the entire chicken breast.  It mostly stayed on the skin and outside flesh.  Maybe with a longer marinating time or I wonder if I could try poking holes in the chicken for some sauce to seep into.  No matter, it smelled great while cooking and it tasted great too.  This chicken made a great vermicelli and it was delicious to eat on its own too.

Lemongrass Chicken Vermicelli


Lemongrass Chicken

Ingredients:

Marinade

2 Tbsp lime juice
1 clove garlic, minced
2 Tbsp minced lemongrass
1 Tbsp brown sugar
2 Tbsp fish sauce
1 Tbsp soy sauce
1/4 cup sliced green onions
2 Tbsp vegetable oil
2 chicken breasts (technically it's only one whole chicken breast but split down the breast bone)

Pound the garlic and lemongrass in a mortar and pestle (or with the flat of a knife) until oils are released and they are fragrant.

Mix the lemongrass, garlic, and other marinade ingredients together and pour over chicken in a sealable bag.  Refrigerate and let marinate for at least 1 hour or overnight might be better.

Preheat oven to 350F

Place the chicken on a rimmed baking dish and pour the rest of the marinade over.

Bake at 350 for about 45 minutes or until internal temp reaches 165.

Allow the chicken to rest for about 15 minutes before slicing and serving.  Serve immediately or it even tastes great cold out of the fridge.

Ingredients continued:

Bean Sprouts
Lettuce
Mint
Thai basil
Cilantro
Vermicelli rice noodles, cooked
Carrots, julienned or shredded
Green onion
Jalapenos, sliced
Lemongrass Chicken
Nuoc cham

Place all the vegetables, herbs, noodles, and chicken in a big salad bowl (use as much of each as you like).  Then pour the nuoc cham over everything (I usually use a few tablespoons but use as much as you like).

Makes about 4-6 servings.
