Christmas Season

 

 

There was a little baking and plenty of tea.

On the plate are mince pies, date pinwheels, spicy pecans and ginger cookies.

Special teatimes with dear friends.

An adventure to downtown Portland on a winter evening for a little night music to celebrate the season at the Old Church concert hall.


It's a tradition my "live-in gardener" and I have done for about 27 years.


The gingerbread house, another tradition, was made.



The Night Before Christmas was read at church.

 
 More tea was imbibed at a local hotel.



A parade of Christmas decorated boats was viewed from the warmth of a friends condo.


And special gifts were unwrapped.
Each year my "live-in gardener" carves a Santa for our D.
This one represents Ukraine and quite special.
D also received this cozy hooded blanket, which he is living in now.
I hear he even wore it outdoors on his scooter.

My Grandpa's Apple

  Once upon a time this was my grandpa's orchard, then it was passed to my aunt and uncle, and now it belongs to my sister and her family. Yes, my grandpa spent many hours here both pruning and picking Gravenstein apples; but also nurturing beehives.

So recently it was a thrill when my mailman delivered a box of 11 Gravenstein apples from these trees. What an amazing treat. My sister thought I would love to make an apple pie once more from this orchard in California. Indeed, I did! I now have one pie in the freezer for a cooler day. I want to really savor it on a cool day when the house can fill with the scent of apple and cinnamon baking.

In the meantime I picked out the biggest apple that had the stripes I admire and carried it to my grandson with my story. Being an older grandmother I want very much to pass my stories on to my D and the apples tell a story of family and growing up running through these very grounds and devouring the perfect apple from these trees.



My grandpa's thermos, which often traveled through the orchard. This time it is joined with one special apple from a tree in his very orchard, which I ate today. Do you see the stripes? Yes, I insist, they must have those stripes to be the best.

Family stories are to be treasured and this is one that is so memorable to me.

A Little Baking

 Once baking begins in my house I really feel the presence of Christmas.

I love baking, so I save it to a time when the music comes on, the house is decorated, and packages sent. It is my most festive time of year.

My mother always made cherry winks just for me and that tradition happens after all these years. I love making them and they say Christmas to me with the citrus flavor and the cherry on top.

Some of the candy canes will be crushed later to sprinkle on top of chocolate cupcakes.
I wasn't going to make sugar cookies this year, but then I saw pretty ones on Instagram
and wouldn't you know it, they were added to the list. They are still frozen now and awaiting icing.
Date pinwheels are always a must to bake and I love that I can keep them ready in the refrigerator when just a few to nibble on are "needed". 
Mince pies are one of my favorites and these little tarts are just the right size to satisfy that hunger.
Yummm!
Now I think I need to go find one.
Even a few little star cookies appeared on my tea table this week.
This is my online zoom tea time with friends. Well you might wonder about the 4 cups, humm?

It was my tea ceremony group where we usually have 4 cups served by different people, but since we are online right now we each drink the 4 little cups of tea ourselves and meditate on those around us and love to the world.

On Christmas morning I always bake a stollen and this year there will be one too. I usually divide the dough into two stollens instead of one large one. This year I may make three small ones so I can pass two of them along to others. After all there are only three of us in my house and how many cookies and stollen do we really need. For me it is the joy, the passing along some of the joy, and just the plain nibble with my cup of tea.

Word for the Day - 2020

 Comfort

 Even though I walk through the darkest valley, I will fear no evil, for you are with me; your rod and your staff, they comfort me. - Psalm 23:4

Wikipedia says: Comfort (or being comfortable) is a sense of physical or psychological ease, often characterized as a lack of hardship.

This morning quite early I baked a cake.  Of course I had to sample it while it was warm.

As I sat with my tea and cake I contemplated the word for today, comfort.  I was nibbling on a lemon cake that is one of my all time favorites and had chosen my favorite tea. I felt comforted just sitting in the quiet of the morning with cake and tea. I am still sipping as I write to you, but the piece of cake is just a happy memory. For a few moments I could imagine a world of peace and joy and my heart was comforted.

Have you felt the need these days for comfort?

Maybe a cozy sweater, warm socks, a quilt to curl up in, a particular meal, a good cup of tea?

I struggle these days with the chaos of the world and the pandemic; so sometimes it is cake and tea. Maybe not great for the waistline, but it does quiet my soul for awhile.

A walk in the woods or even in my neighborhood comforts me also.

On Facebook I share a picture from my garden each day just for the comfort and joy it brings to others.

Just the act of going into the garden each morning to snap that pictures brings me comfort and joy also.

Here is the picture this morning from my garden. Doesn't the beauty of a simple rose opening to the world bring a bit of comfort? The raindrops just enhance it's beauty. Go out and savor the day and feel the moments of comfort and joy.

Taste of Autumn

 With the cooling in the air and the leaves beginning to fall my mind has traveled to Autumn and the tastes of richness in flavors, more spices for sure.

Pumpkins have been delighting me. As I do my occasional visit to the market several have come home. I think that little orange pumpkin will soon be in a pumpkin bread full of spices soon.

There was one more teatime in the garden this week.

The tea was a Bourbon Black tea from Elmwood Inn and the cookies were a new to me recipe from King Arthur Baking website. This ginger spice cookie will definitely be a repeat, it was just the right amount of ginger and chewiness with little bits of crystallized ginger.

Bringing out the French table cloth each Autumn sings to my heart. With past visits to France it sits in my heart with joy. The teacup was brought back from one of those trips also and is quite old. Treasures from travel that I can enjoy for many years makes me smile in remembrance each time I see them.  
 
This week I received the Victoria Magazine book, Our Hearts are in France, and it reminded me once again how I loved traveling to France and how my heart wants to go once more. My little garden teatime was in celebration of those travels in Autumn.
Homemade caramel corn has also appeared in my home recently.
Caramel and spices just say Autumn.

Tea in the Garden

Realizing that summer is fleeting I decided to take tea in the garden on a couple occasions recently.
As I sat exploring a very old book on local wildflowers I sipped Kim Tuyen black tea
from Harney and Sons.  It is a lovely morning tea grown in Viet Nam. I quite like it,
but sometimes hard to find. Oatmeal cookies was the perfect addition to the sipping.
Recently I found the Lemon Cyprus tree at Trader Joe's and it just had to come home with me.
Don't you think it will be pretty at Christmas with miniature twinkle lights?

                              The second tea time was sitting near the garden house in the garden.                         For that tea time there was pineapple upside down cake, a favorite of mine since I was a young girl.

 The tea was another lovely black tea from China this time. It was Wild Lapsang from Wuyi Origins.

 Both of these teas are fairly new to my stash and will satisfy my tea craving as we head into Autumn.

As the weather cools in September I may need to move into the garden house, but for now outdoors delights me.
The wicker table is a fairly new find at the local antique mall.  It normally sits in my studio/office.  I thought it was perfect for tea in the garden.

Pie


Recently a friend invited me to come to her yard and pick berries.
In the past I have picked marionberries there, but this time it was
loganberries and raspberries.
Now Oregon does grow wonderful berries
and I love, love having them in my freezer.
So off I went!

The berry vines were loaded and more than my friend could use.
In no time we had a bucket of loganberries and another of raspberries.
Definitely a pie was in order.
"We must have pie. Stress cannot exist in the presence of a pie."  ~David Mamet

Indeed I must agree with that quote.

Earlier this week I was reading about "soul food" and what food comforted you growing up.
Thinking on this I came to the conclusion it was pie for me.
Any kind of pie would do, but fruit pies were at the top of the list.
Yesterday I went on a hike with my 7 year old grandson and told him about
reading about "soul food".
I asked if I could teach him how to make a pie and he agreed.
So one day we will plan a day to make a pie.

The berry pie was a combination of loganberry, raspberry, and a hand full of blueberries.
Needless to say, it was quite delicious and quite gone now.

There is another pie filling in the freezer for winter.
I love having summer sun in my freezer during the bleak winter months.
Then the raspberries are frozen too, but for another reason.
I love raspberries in my morning yogurt.
Already I look forward to a hand full of raspberries tomorrow.

Baking for the Holiday

Looking at my plates I see there always must be a touch of citrus 
in my Christmas baking.

Mince tarts with a bit of orange peel.
A clementine or two.
Cherry winks with grated lemon peel, my favorite.

A favorite book to read with my morning snack.
And always a cup of tea by my side.

More tea resides among the poinsettias!
A mandarin too!
Date pinwheels are always on the list.
New this year is a mint with chocolate ganache cookie
and a little Dundee cake with dried cherries.
A recipe from Tasha Tudors cookbook from long ago.
Yet to bake on Christmas morning is stollen with candied cherries inside.

You might think this is a lot or maybe you don't.
I love to bake at Christmas time
and then take a break with a good cup of tea and a nibble.

A Season of Love with a Cup of Tea

Each day must have love, but at this time of the year
Love abounds in our hearts as we celebrate our Valentine's.
Dear ones that we treasure and embrace.
So a teatime was one way for me to show love
by the planning and preparing, then presenting.
The table was set by the windows in the living room,
not too far from the warmth of the fire in the fireplace.
The tea was the one I love most, a delicious Yunnan Gold.
The sandwich was chicken curry.
Cream scones with cherry jam and butter were warm from the oven.
The sweets were strawberries, lemon bars, and red velvet cupcakes with a sugar cookie on top.
I have always been fascinated with the heart shape of the strawberry.
And of course there must be flowers.
Chrysanthemums and tulips seemed to sing to my heart.

Peach Pie

 Today, friends, we will make a fresh peach pie.
My recipe book was totally worn out, especially the pie page.
Last year I finally took the book apart and put my favorites 
in plastic sleeves.
It was a wedding gift over 50 years ago
and the Better Homes and Garden cookbook that taught me to cook.
 OK, I have the dry ingredients together and ready to peel and slice the fruit.
All my tools are out on the counter ready to go.
 I measure the flour and salt in a bowl,
then comes the shortening.
I pour boiling hot water in the measuring cup with the spoon,
then after the cup and spoon are warmed up the water is dumped
and in goes the shortening.
If you don't know this little trick it is a good one for measuring
shortening and getting it out of the cup cleanly.
 Now the pastry blender is put to work, blending flour and shortening.
 All blended, now we move on.
 You see there is ice in my measuring cup,
it has been getting cold and waiting for me.
I measure out the water into the little cup nearby.
 And into the flour/shortening mixture it goes.
The fork works to do a bit of stirring.
 When the water seems fairly incorporated,
I knead the dough with my hands until it is in a ball.
 Separate the ball into two balls and flatten a bit.
Time to flour the board.
 The rolling pin is now rolling out one of the flattened balls
to desired thickness to fit in pie plate.
To transfer the rolled out dough you can either fold it in fourths
or wrap around the rolling pin and unroll over the pie plate.
 Fill with your prepared filling
and dab with a bit of butter.
Sometimes I forget the butter, but it still works.
 Cover with the second rolled out pastry ball,
scrimp edges or seal with the fork, then
trim off the excess dough.
My traditional design is a butterfly;
so there it is carved into the top.
Sprinkle with a little sugar.
 And into the oven it goes.
 While it is baking, I rolled out the excess dough,
spread with butter and sprinkle with a mixture
of cinnamon/sugar, then bake.
They are a yummy extra treat with a cup of tea.
 Both out of the oven now and cooling.
Ahhhhh! the fragrance is divine!
 And here you are!
One delicious peach pie and cinnamon sticks on the side.
Ready for the deliciousness with my cup of tea right now.
Recipe from Better, Homes and Garden cookbook, the one I follow
for a two crusted pie:
2 cups flour (I use unbleached and use the dip method of measuring)
1 teaspoon salt
2/3 cup shortening
6 tablespoons cold water

That's it folks!
Use with whatever filling you desire.
My #1 pie is Gravenstein apple
#2 is Marionberry
and from there could be whatever my heart desires.
I love making pies, a family tradition.
