That's exactly what this tomato and eggplant soup is. Okay, that's one half. So, just keep your fingers out of the way. So much easier to do with the vegetable flat on the board. Okay. So, I've got half a cup of olive oil. Just going to put the eggplant in. Okay, all goes in the pot. This makes a huge pot of soup. So I'm just going to cook this for about five minutes just until the eggplant is tender. It's amazing how much olive oil this absorbs. So, I'm going to add a little more before I add some onions and fennel. Just a few tablespoons. It smells so good. Okay, two cups of chopped onions, two cups of chopped fennel. In this process, you can't hurry. The onions and fennel really need to cook for like 6 minutes. Okay, eggplants cooked. The fennel and the onions are tender and now I'm going to add some garlic. I always add the garlic at the end of sauteing because I don't want it to burn. This is 2 tablespoons, a lot of garlic. It gives it a lot of flavor. Just going to cook that for 1 minute. I'm going to add three cups of chicken stock. Got nice hot chicken stock, homemade if you can. It's always better. And one can of Samaritan of crushed tomatoes. Okay, next, I'm going to put in some fennel seed. There's fennel in it but I'm putting in fennel seed to really intensify the flavor. So, two teaspoons of fennel seed, Gonna put in some fresh thyme. Next is oregano. I actually think oregano. Fresh oregano is a little too strong so I use it dried. One and a half teaspoons of dried oregano. And last I'm going to put a little hot pepper in like crushed red pepper flakes. Just about a/ 4 of a teaspoon. Just like a little bit of heat. Give that a big stir. Okay, next is salt and pepper. One tablespoon of salt. It's a lot but it's a big pot of soup. 2 teaspoons of pepper. And just give it a big stir. So, this is one of the secrets about why this soup is so delicious. I like the creaminess of the crushed tomatoes in the pot but then, I'm going to add some chopped tomatoes and it's going to give a little texture. So, what I do is I start with a can of whole tomatoes and if I can pour this in here without getting it all over myself and then I just blitz them in the food processor until they're just chopped. I'm going to simmer this for 15 minutes just pretty fast for soup and in the meantime, I'm going to show you how I use the leftovers to make that pasta I told you about. First, I'll pour three cups of the soup into a bowl. Add eight ounces of cooked pasta. I mix penne rigatte and frizzili together. I think it looks great. Then four ounces of diced fresh mozzarella and two tablespoons of freshly grated Italian parmesan. Next, I'll sprinkle in one and a half teaspoons of salt. Three quarters of a teaspoon of pepper, toss everything together, and divide it between three grattan dishes, I'll dot the tops with two tablespoons of diced unsalted butter and bake the at 500 degrees for 10 minutes. When they're beginning to brown, I'll sprinkle a tablespoon of grated Italian Parmesan over each dish and bake them for another 4 minutes. Oh my goodness. How good does that look? Look how gorgeous this is. It smells fabulous. It's really chunky and flavorful. Little Parmesan cheese on top. Little drizzle of olive oil. It is Italian after all. Now, that's an Italian soup.
