We’ve loaded it with extra veggies to make it extra special and a creamy Greek vinaigrette. Super flavorful and crunchy and perfect to meal prep. Eat with a spoon for extra bonus points 😁 8 Persian cucumbers 3 bell peppers 2 can chickpeas 1 container cherry tomatoes 1 red onion Chopped artichokes (pat dry) 1 cup calvestrano olives 1 cup vegan feta Dressing: 3/4 cup extra virgin olive oil 2 tbsp aged balsamic vinegar or honey 2 tsp Dijon Juice from 1/2 a lemon 1 tbsp oregano 1 tsp garlic powder Salt and pepper to taste Instructions Chop vegetables very small and place into a large bowl.
