(54) СПОСОБ ТЕНДЕРИЗАЦИИ МЯСА(54) METHOD FOR TENDERIZING MEAT

Изобретение относитс  к м сной иромыпшенности и предназначено дл  улучшени  качества м са. Известен способ тендеризации м с предусматривающий ввод электродов с частотой тока 20-60 импульсов в секунду в конечности убитого животного ij. Однако ввиду высокого напр жени  м со в местах ввода электродов подго рает, обугливаетс  и становитс  непригодным дл  употреблени , что веде к потер м продукта. Кроме того, процесс тендеризации м са происходит неравномерно, Цель изобретени  - равно 1ерное распределение тока и предотвращение подгорани  м са в местах ввода элект родов. Дп  достижени  цели-в способе тен деризации м са, предусматривающем ввод электродов с частотой тока 2060 импульсов в секунду в конечности убитого животного, обработку туши ве дут электрическим током с напр жением 200-300 В в течение 1-3 мин, помеща  животное в магнитное поле напр женностью 200-500 Э. Пример. В конечности: туши ввод т электроды и подают напр жение 200 В с частотой 20 импульсов в секунду. Обработку провод т, помеда  ее в магнитное поле напр женностью 200 Э/мин. Результаты анализов консистенции м са показьшают, что опытное м со нежнее контрольного. Так например, усилие среза и усилие на разрыв опытных образцов составл ет 5,5 кг/см и IjO кг/см ,в то врем  как у контрольных образцов, не подвергнутых обработке, соответственно составл ет 7,2 кг/см и 1,6 кг/см . Пример2. Увеличивают напр жение электрического тока до 300 В; частоту тока до 60 импульсов в сёкув ду, напр женность магнитного пол  до 500 Э, а врем  обработки туши до 3 мин.Анализы консистенции м са показывают, что нежность несколько увеличиваетс , так, например, усилие среза или усилие на разрыв у опытных образцов составл ет соответственно 5,0 кг/см и 0,7 кг/см. В дальнейшем увеличивают напр жение до 400 В, частоту тока до 100 импульсов в секунду, напр женность магнитного пол  до 1000 Эй врем  обработки до 5 мин.
