Abstract
Description
一態様に従って、飲料を提供する。飲料は、飲料中に存在する無栄養甘味料(複数可)及び/又はカフェインの苦いオフノートの味を低減する(即ち、部分的に、実質的に、又は完全に除去する)のに十分な配合量でリノール酸及びヘプタン酸の組合せを含む。
別の態様に従って、飲料を提供する。特に、飲料は、脂肪酸及びアルデヒドの組合せを含む。飲料は、少なくとも1種類の無栄養甘味料で甘味を付けられ、カプリル酸、カプロン酸、及び酪酸の組合せを更に含む。この組成物は、ヘプタン酸、ラウリン酸、プロピオン酸、及びイソ吉草酸を更に含んでもよい。これらの脂肪酸に加え、アルデヒド、特にデカナール、ノナナール、及び2−メチル−ブチルアルデヒドが飲料に含まれる。この成分は、脂肪酸の全ての異味を緩和しながら、口当たりを改善する量で存在する。

Reb−A(500ppm)の苦味の知覚の低減に及ぼす影響に関して、100%のReb A(500ppm)、25%減少させたReb A(375ppm)及び50%減少させたReb A(250ppm)のベンチマークと比較して、6種類の脂肪酸を個々に評価した。試験された化合物は、エタノール中0.0005wt%〜0.55wt%の量のカプリル酸、ヘプタン酸、吉草酸、カプロン酸、ラウリン酸、及びリノール酸であった。

Claims (8)
- 水と、
少なくとも1種類の無栄養甘味料と、
カプリル酸、カプロン酸、及び酪酸の組合せと、
デカナール、ノナナール、及び2−メチル−ブチルアルデヒドからなる群から選択される少なくとも1種類のアルデヒドと、
を含む、飲料。 - ヘプタン酸、ラウリン酸、プロピオン酸、及びイソ吉草酸のうち1つ、2つ、3つ、若しくは全て、又は
デカナール、ノナナール、及び2−メチル−ブチルアルデヒドのうち少なくとも2つ、又は
デカナール、ノナナール、及び2−メチル−ブチルアルデヒドの組合せ、
を更に含む、請求項1に記載の飲料。 - 前記少なくとも1種類の無栄養甘味料が、少なくとも1種類のステビオール配糖体である、請求項1又は2に記載の飲料。
- 酸若しくは渋味遮断剤、又はメントール系若しくはミント系を更に含む、請求項1〜3のいずれか一項に記載の飲料。
- 前記飲料中の組み合わせたカプリル酸、カプロン酸、及び酪酸の濃度が、約1兆分の50部〜約100万分の500部、約100万分の1部〜約100万分の250部である、請求項1〜4のいずれか一項に記載の飲料。
- 飲料用の飲料シロップであって、前記シロップを希釈剤と混合して飲料を作製するとき、少なくとも1種類の無栄養甘味料と、カプリル酸、カプロン酸、及び酪酸の組合せと、デカナール、ノナナール、及び2−メチル−ブチルアルデヒドからなる群から選択される少なくとも1種類のアルデヒドと、を含む、飲料シロップ。
- 前記少なくとも1種類の無栄養甘味料は、少なくとも1種類のステビオール配糖体を選択される、請求項6に記載の飲料シロップ。
- 酸若しくは渋味遮断剤、又はメントール系若しくはミント系を更に含む、請求項6又は7に記載の飲料シロップ。
