Abstract
Description
茶葉を向流式連続抽出機(ニロ・アトマイザー)で抽出した。熱水(80〜85℃)を抽出溶媒として用い、茶:水の比を1:5(w:w)とし、抽出器の内部の紅茶に15分間供給した。その後、茶抽出物を遠心分離して茶乳状物(tea cream)および濁りを特定のレベル(約14°Bx値、可溶性固形分含量)にまで減少させ、遠心分離した紅茶抽出物をクエン酸−クエン酸ナトリウム緩衝液と混合してpHを約3.25にした。その後、この混合物に乳化剤(ポリオキシエチレン(20)ソルビタンモノオレエートおよびスクロース脂肪酸エステル(HLB 16);0.2および0.1%w/v)を溶解し、疎水性植物ステロール(20%)を添加し、混合物を65〜80℃に加熱し、高せん断ミキサー(Ultra−Turrax)を用いて1000rpmで約5分間混和した。その後、12000psi(82.7MPa)および5000psi(34.5MPa)の高圧マイクロフルイダイザー(Microfluidics)を用いて均質化し、10μm未満の粒径を得た。
実施例1の紅茶抽出物は、緑茶抽出物または任意の他のハーブティー抽出物で置き換えることができる。マイクロフルイダイザーで十分に作用することができるようにベース混合物に添加された最高の植物ステロールは約15〜25%であった。飲料の1回摂取量(250ml)中に1gの植物ステロールを得るために、希釈比は約1対40〜60(w:w)とし、この茶抽出物は、当初のブリックス度が約14の場合に、1リットル当たり約3〜2.25gの茶となるように希釈された。飲料の最終固形分は、感覚受容およびハーブティー抽出物のブリックス度値、ベース混合物のステロール含量に応じて異なる値に設定することができる
ステロール強化粉末茶の製造
全重量で5%のアラビアガム、またはアラビアガム:マルトデキストリン(1:4、w:w)と混合された実施例1、2のベース混合物を、140℃の入口温度で噴霧乾燥することができ、出口での温度は90℃であった。生成した粉末の最終ステロール含量は、実施例1からの混合物では約50%であった。また、以下の条件で流動床反応器を用いることにより、茶抽出物を凝集させることができる。空気流速:105〜80m3/h、空気温度:85℃、排気温度:45〜50℃、生成物温度:50〜55℃、噴霧圧力:2.5バール(250kPa)、ポンプ位置:3−8。最終粉末は、砂糖または甘味料と混合して、水に再分散した後に飲用可能となるアイスティー飲料とすることができる。
Claims (25)
- 1種以上の実質的に安定な疎水性植物ステロールを補強した1種以上の水性ポリフェノール強化ハーブティー抽出物を含有する食品および飲料の製造方法。
- カメリア・シネンシスから作られた緑茶、紅茶、烏龍茶、および白茶を含むハーブティー、または、ジャスミン、リンデン、ルイボス、ローズヒップ、アニス、朝鮮人参、カモミール、ローズマリー、セージ、ミント、メリッサ、エキナセア、グアバの葉およびそれらの混合物を含む他の典型的なハーブティーを用いることができる、請求項1に記載の方法。。
- 疎水性植物ステロールを懸濁させる場合には、水性媒体の濃度は、水性媒体1リットル当たり約10グラム〜約200グラムの植物ステロールである、請求項1に記載の方法。
- 水性媒体は、水性ハーブティー抽出物を乳化剤または安定剤と組み合わせて含むことができる、請求項1に記載の方法。
- 疎水性植物ステロールを、水性ポリフェノール強化ハーブティー抽出物を含有する、好ましくは高いHLB値を有する乳化剤または乳化剤/安定剤の混合物の送達媒体中に、分散または懸濁させることを伴い、

- 加熱された分散液を約25℃に冷却する、請求項5に記載の方法。
- 分散液の均質化は、マイクロフルイダイザーまたは高圧ホモジナイザー等のホモジナイザーで行う、請求項5に記載の方法。
- 分散液を予め高せん断ミキサーで処理することができる、請求項5に記載の方法。
- 均質化を、好ましくは4,000〜20,000psiの間で行うことができる、請求項5に記載の方法。
- 単一または多段の異なる圧力で均質化を行う、請求項5に記載の方法。
- 水性ポリフェノール強化ハーブティー抽出物は、固定床反応器、並流もしくは向流式連続反応器等の様々な装置を用いて茶葉を溶媒(一般には熱水)抽出することにより、または単に茶を淹れることによって製造することができる、請求項5に記載の方法。
- 溶媒は、不溶性部分の分離およびポリフェノールの保存を容易にする酸性緩衝液とすることができ、抽出物中の不溶性部分は、遠心分離によって分離することができ、遠心分離液または濾液の固形分濃度またはpHは、分離工程の後または前に調整することができる、請求項17に記載の方法。
- 主として植物ステロールおよびハーブティー抽出物を含むこの水性均質化分散物は、噴霧乾燥または凍結乾燥または真空乾燥されて、多糖類、マルトデキストリン、アラビアガム、デンプンおよびデンプン誘導体、加工デンプン、寒天、アルギン酸、ガム、セルロース、微晶質セルロース等であるが、これらに限定されない賦形剤、または脱脂粉乳、ホエータンパク質等のタンパク質の存在下で、水分散性ステロール補強粉末茶となる、請求項5に記載の方法。
- 乾燥生成物中の賦形剤の含量は、2〜40重量%、好ましくは約5〜20重量%の範囲である、請求項19に記載の方法。
- 粉末は、約10重量%〜約60重量%の植物ステロール、好ましくは約30重量%〜40重量%の植物ステロールを含むことができる、請求項19の方法により製造された製品。
- 組成物の残部は、水性ハーブティー抽出物および賦形剤、安定剤の乾燥物からなることができる、請求項19の方法により製造された製品。
- 粉末の流動性は、任意選択で、リン酸三カルシウム、タルク、ステアリン酸およびその塩、ポリエチレングリコールまたはヒュームド二酸化ケイ素などの凝結防止剤の使用によって改善する、請求項19に記載の方法。
- 植物ステロール強化ハーブティー抽出物およびその乾燥形態は、医薬または栄養学的製品および飲料の調製、ならびに、かかる製品の医学的適用に使用することができる、請求項5および19に記載の方法により製造された製品。
- 茶ポリフェノール等のさらなる成分を含むことができる、請求項5および19に記載の方法により製造された製品。
