PROCEDIMIENTO PARA LA OBTENCION DE ACIDO D- O L-LACTICO MEDIANTE FERMENTACION. SE FERMENTA UN MEDIO ACUOSO QUE CONTIENE NITROGENO, VITAMINAS, AMINOACIDOS, AZUCAR Y ELEMENTOS EN ESTADO DE TRAZAS, POR MEDIO DE UN MICROORGANISMO A PH COMPRENDIDO ENTRE 4 Y 6, CONTENIENDO EL MEDIO NUTRITIVO LEVADURA DE CERVEZA COMO FUENTE DE NITROGENO, VITAMINAS, AMINOACIDOS Y ELEMENTOS EN ESTADO DE TRAZAS. COMO MICROORGANISMOS SE PUEDEN UTILIZAR CUALQUIERA QUE FORME UN ENANTIOMETRO DEL ACIDO LACTICO. SE UTILIZA EN CANTIDADES APRECIABLES EN LA INDUSTRIA DE LOS ALIMENTOS.
