Abstract
本申请提供了一种性质均一、稳定的特殊医学用途全营养配方食品,其中包含植物脂肪粉、固体淀粉糖、分离乳清蛋白粉、柠檬酸钾、柠檬酸钠、复配矿物质、磷酸氢钙、氯化钾、复配维生素、氯化钠等成分。本申请的特殊医学用途全营养配方食品中复配维生素使用喷雾制粒方法,以麦芽糊精和卡拉胶作为赋形剂制备;该制备方法有效提高了产品的均一性。

本申请属于食品领域,具体地,本申请提供了一种性质均一、稳定的特殊医学用途全营养配方食品。
背景技术:
老人、术后病人、肿瘤患者以及某些慢性病患者经常受到进食困难,消化吸收障碍或者代谢紊乱问题的困扰,造成营养状况不佳,进而影响身体状态和疾病治疗。
针对这类人群对于膳食和营养的特殊要求,临床上经常推荐其食用特殊医学用途全营养配方食品。特殊医学用途全营养配方食品中蛋白、脂肪、糖类、维生素和矿物质种类全面配比科学,可以有效补充此类人群的营养缺陷,甚至可以此类人群的单一营养源。
特殊医学用途全营养配方食品中成分多达仅百种,各种成分含量和颗粒尺寸差异巨大(经过有数个数量级的差异),而且还存在大量的吸附、包裹等情况。如何将这些成分,特别是含量少而作用显著的维生素成分,快速、充分混合为均一而稳定的产品,是特殊医学用途全营养配方食品制备、质量控制中的难题之一。目前采用的预混料、超微粉碎、喷雾制粒等方法均有改进的空间。
发明内容
针对以上问题,申请人改进了预混维生素混合方法和复配矿物质处理方法,有效提高了维生素和矿物质的混合均匀度。
一方面,本申请提供了一种特殊医学用途全营养配方食品,其包含植物脂肪粉、固体淀粉糖、分离乳清蛋白粉、柠檬酸钾、柠檬酸钠、复配矿物质、磷酸氢钙、氯化钾、复配维生素、氯化钠;所述植物脂肪粉包括麦芽糊精、植物油、固体淀粉糖、分离乳清蛋白粉、单,双甘油脂肪酸酯、L-抗坏血酸钠、抗坏血酸棕榈酸酯、生育酚、磷脂。
进一步地,所述特殊医学用途全营养配方食品包含包含植物脂肪粉40-70%、固体淀粉糖10-20%、分离乳清蛋白粉5-10%、柠檬酸钾4-12%、柠檬酸钠2-8%、复配矿物质0.2-3%、磷酸氢钙0.5-3%、氯化钾0.2-2%、复配维生素0.2-1%、氯化钠0.1-1%;
优选地,植物脂肪粉59%、固体淀粉糖14.4%、分离乳清蛋白粉10%、柠檬酸钾7%、柠檬酸钠5%、复配矿物质1.5%、磷酸氢钙1.2%、氯化钾0.8%、复配维生素0.6%、氯化钠0.5%。
所述植物脂肪粉包括麦芽糊精35-50%、植物油15-35%、固体淀粉糖10-25%、分离乳清蛋白粉10-20%、单,双甘油脂肪酸酯0.1-1%、L-抗坏血酸钠0.1-2%、抗坏血酸棕榈酸酯0.01-0.1%、生育酚0.01-0.1%、磷脂0.005-0.03%;
优选地,麦芽糊精41.7%、植物油24%、固体淀粉糖17.4%、分离乳清蛋白粉15.8%、单,双甘油脂肪酸酯0.69%、L-抗坏血酸钠0.332%、抗坏血酸棕榈酸酯0.03%、生育酚0.03%、磷脂0.018%。
进一步地,所述复配维生素包含麦芽糊精70-90%、卡拉胶1-8%以及醋酸视黄酯0.05-0.2%、胆钙化醇0.0005-0.002%、dl-α-醋酸生育酚2-2.5%、植物甲萘醌0.01-0.03%、盐酸硫胺素0.1-0.4%、核黄素0.1-0.3%、盐酸吡哆醇0.1-0.3%、氰钴胺0.0001-0.001%、烟酰胺1-3%、叶酸0.01-0.05%、D-泛酸钙0.1-0.8%、L-抗坏血酸钠2-6%、D-生物素0.001-0.007%;

进一步地,所述复配维生素的制备过程包括喷雾制粒步骤。
进一步地,所述喷雾制粒步骤为:将原料溶于2倍质量的50摄氏度水中,搅拌均匀;进料温度40摄氏度,进风口温度120摄氏度,泵速25%;喷雾干燥制备粉体。
进一步地,所述复配矿物质包括硫酸铜、硫酸镁、硫酸亚铁、硫酸锌、硫酸锰、碘酸钾、亚硒酸钠。
具体实施方式
实施例1主要试剂和实验方法
麦芽糊精:常规国产原料,符合食品用相关标准;
卡拉胶:河南中辰生物科技有限公司。
包括维生素、矿物质在内其他原料为常规国产或进口食品级原料。
混合均匀度检测方法:
对同一批次产品,进行10次取样,检测其中的目标成分含量;计算平均值X和标准差S,通过公式CV=S/X×100%来计算变异系数CV;每批次产品计算3次CV,取CV的平均值。
喷雾制粒:
使用浙江钱江伟岸干燥设备有限公司的PGL-B喷雾干燥制粒机;将原料溶于2倍质量的50摄氏度水中,搅拌均匀;进料温度40摄氏度,进风口温度120摄氏度,泵速25%;喷雾干燥制备粉体。
实施例2复配维生素的制备
申请人验证了大量赋形剂种类和组合(以下仅展示部分代表性配方),发现适量使用卡拉胶可有有效提高维生素,特别是脂溶性维生素的分散效果。
以下复配维生素配方中的维生素相同,包含:醋酸视黄酯0.1054%、胆钙化醇0.0011%、dl-α-醋酸生育酚2.2333%、植物甲萘醌0.0167%、盐酸硫胺素0.2%、核黄素0.1667%、盐酸吡哆醇0.2%、氰钴胺0.0005%、烟酰胺2%、叶酸0.0333%、D-泛酸钙0.6333%、L-抗坏血酸钠4.4047%、D-生物素0.005%;约90%的赋形剂有区别。
不同赋形剂配方下各种维生素的CV的平均CV%值
结果表明,适当的增稠赋形剂可以有效的提高维生素,特别是脂溶性维生素A、E的分散效果;可能是由于溶液中胶体状态的变化非常敏感,改变增稠赋形剂的种类或者用量时,分散效果很容易发生变化。
实施例3特殊医学用途全营养配方食品实际制备
制备过程中复配维生素使用实施例2中优化的制备方法(85%麦芽糊精+5%卡拉胶赋形剂)制备。
按照以下配方配制特殊医学用途全营养配方食品:
植物脂肪粉59%、固体淀粉糖14.4%、分离乳清蛋白粉10%、柠檬酸钾7%、柠檬酸钠5%、复配矿物质1.5%、磷酸氢钙1.2%、氯化钾0.8%、复配维生素0.6%、氯化钠0.5%。
植物脂肪粉包括麦芽糊精41.7%、植物油24%、固体淀粉糖17.4%、分离乳清蛋白粉15.8%、单,双甘油脂肪酸酯0.69%、L-抗坏血酸钠0.332%、抗坏血酸棕榈酸酯0.03%、生育酚0.03%、磷脂0.018%。

1.一种特殊医学用途全营养配方食品,其特征在于,所述食品包括植物脂肪粉59%、固体淀粉糖14.4%、分离乳清蛋白粉10%、柠檬酸钾7%、柠檬酸钠5%、复配矿物质1.5%、磷酸氢钙1.2%、氯化钾0.8%、复配维生素0.6%、氯化钠0.5%;
所述植物脂肪粉包括麦芽糊精35-50%、植物油15-35%、固体淀粉糖10-25%、分离乳清蛋白粉10-20%、单,双甘油脂肪酸酯0.1-1%、L-抗坏血酸钠0.1-2%、抗坏血酸棕榈酸酯0.01-0.1%、生育酚0.01-0.1%、磷脂0.005-0.03%;
所述复配维生素包含麦芽糊精85%、卡拉胶5%以及醋酸视黄酯0.1054%、胆钙化醇0.0011%、dl-α-醋酸生育酚2.2333%、植物甲萘醌0.0167%、盐酸硫胺素0.2%、核黄素0.1667%、盐酸吡哆醇0.2%、氰钴胺0.0005%、烟酰胺2%、叶酸0.0333%、D-泛酸钙0.6333%、L-抗坏血酸钠4.4047%、D-生物素0.005%;

2.根据权利要求1所述的食品,其中所述植物脂肪粉包括麦芽糊精41.7%、植物油24%、固体淀粉糖17.4%、分离乳清蛋白粉15.8%、单,双甘油脂肪酸酯0.69%、L-抗坏血酸钠0.332%、抗坏血酸棕榈酸酯0.03%、生育酚0.03%、磷脂0.018%。
3.根据权利要求1所述的食品,其中所述复配矿物质包括硫酸铜、硫酸镁、硫酸亚铁、硫酸锌、硫酸锰、碘酸钾、亚硒酸钠。
