Abstract
La invención está dirigida a un método para preparar un sucedáneo de leche a partir de almidón y proteína que se aíslan primeramente de una raíz, tubérculo, cereal, nuez o leguminosa. El método comprende preparar una emulsión que comprende al menos 0.3% en peso de agente emulsionante (almidón modificado y opcionalmente proteína nativa), al menos 0.2% en peso de proteína desnaturalizada, al menos 1.0% en peso de lípido. Aislando primeramente el almidón y la proteína de la fuente vegetal y luego, en un paso posterior, recombinándolos en la forma y las cantidades deseadas, la invención permite un mayor control de la composición final y las propiedades organolépticas del sucedáneo de leche.
