Dough (for 15 donuts):

• 250 g 00 Caputo flour
• 25 g sugar
• 3 g salt
• 5 g instant yeast
• 5 g vanilla
• 1 large egg (50 g)
• 140 g milk
• 25 g butter

Vanilla Pastry Cream:

• 250 g milk
• 110 g heavy cream (35%)
• ½ vanilla bean
• 2 egg yolks (40 g)
• 25 g sugar
• 25 g cornstarch
• 60 g white chocolate
• 25 g butter
• 5 g gelatin powder (dissolved in 20 g water)

Instructions:

Pastry Cream:
Boil the milk, cream, and vanilla. In a separate bowl, mix egg yolks, sugar, and cornstarch. Slowly add the milk mixture while whisking. Cook for 2 minutes until thick, then mix in white chocolate, butter, and gelatin.
