Ingredients: 

- 1 lb potatoes, boiled & mashed
- 2½ cups cream cheese
- 3 red onions, sliced
- 2 cups chopped bacon or bacon bits
- 1 cup shredded cheese
- chopped spring onions
- cooking oil to line the quiche pan

Bake at 400°F for 20 minutes.

Elena JoyfullyKeto on Instagram: "Say YUM if you would eat this tortilla quiche bake. 🥧  You need:   Low carb tortilla  3 eggs 1/2 cup cottage cheese  Veggies of choice (2 slices tomatoes, chopped, and 1/2 cup spinach) 1/2 cup shredded mozzarella.   How ti make it:  Place a tortilla in a pie plate (butter the bottom if you like it extra crispy). Put the eggs and cottage cheese in tortilla, season with salt and pepper to taste and blend with the fork. (For extra creamy quiche blend the eggs and cottage cheese with a splash of creme before adding to the dish). Top with veggies and cheese and and bake at 350 for 20-25 min.
