Add evaporated milk: Gradually add the evaporated milk, a little at a time, stirring continuously. This process should take about 10 minutes per can. Make sure to maintain a steady, gentle boil while stirring. 4. Monitor temperature: Once all the milk is incorporated, place a candy thermometer in the mixture. Continue cooking, stirring occasionally, until the caramel reaches between 235°F and 238°F (soft ball stage). This step ensures your caramel has the perfect chewy texture—neither too sticky nor too hard. *Tip: You can test the caramel by dropping a small amount into cold water.
