Organic agriculture ensures sustainable production, safe food and environmental conservation. It is estimated that more than 95% of organic production is based on crop varieties that were bred for the conventional high-input sector. Such varieties lack important traits required under organic and low-input production conditions. There is dearth of information on the response of varieties to organic management. Resistant starch (RS), a functional food ingredient and a type of fibre that provides the benefit... more Resistant starch (RS), a functional food ingredient and a type of fibre that provides the benefits of both insoluble and soluble fibres, gains attention due to its unique functional and health attributes. The aim of this study was to investigate the resistant starch content in the starch isolated from different botanical sources such as cereals (maize, rice, oats, wheat, barley), legumes (lentil, mung bean), vegetable (raw banana), and roots/tubers (potato, cassava, sweet potato and arrowroot). The rapidly digestible starch (RDS), slowly digestible starch (SDS) and RS contents in the starch samples were determined and related with their physiochemical and functional properties. The study showed that the starch from different sources varied significantly in their chemical, physical and functional properties as well as in RS content. In this study, a comparison of different water smart technologies, namely, porous ground cover mat, super absorbent polymer, partial root zone drying technique, bio mulching and foliar application of antitranspirant was made for enhancing water productivity in tuber crops using elephant foot yam as the test crop. Elephant foot yam (Amorphophallus paeoniifolius) is an important tropical tuber crop in India, and has attained commercial status in many states under assured irrigation. Mulching with ground cover mat and soil application of cassava starch-based super absorbent polymer recorded higher water productivity, reduced irrigation water requirement to 50% and enhanced the corm yield of elephant foot yam by 8–12% and energy use efficiency by 24–28% as compared to 100% irrigation...

Starch is one of the cheapest and most abundant natural carbohydrate biopolymers and is compatibl... more Starch is one of the cheapest and most abundant natural carbohydrate biopolymers and is compatible with hydrocolloids and other water-soluble polymers. Therefore, it can be an effective component in multifunctional systems. To impart end use specific properties, starch is often modified. Chemical modification of starch by grafting various monomers onto it has been found attractive to impart desirable properties to starch without sacrificing its biological nature. Graft copolymerisation is one way to introduce biodegradability and improved properties to a polymer. Usually graft copolymerisation reactions are carried out by free radical initiated polymerisation reaction and in the literature different types of initiating systems are reported. Depending upon the type of monomers and the conditions employed the properties of the starch-graft-copolymers vary to a large extent. In this chapter, the various techniques used for the synthesis of starch-graft-copolymers, their properties and possible end uses are discussed in detail.
