Three cheese risotto

Jamie's three cheese risotto is a an indulgent treat for any cheese lover; using Gruyere, Taleggio and Parmesan cheese.

Three words: Creamy. Cheesy. Heaven.

This is the BEST risotto recipe ever, and it's my most requested dish from family and friends. Rich and creamy, it reminds me of the risotto we've eaten in Italy but made easily in your very own kitchen. With plenty of freshly grated parmesan, a pinch of saffron if you have it, and enriched with some dry white wine, this risotto is the perfect accompaniment to chicken, salmon, or shrimp, or as a standalone dish to wow!

I got this off Food Network awhile ago. This is a regular in our house. I love having the leftovers and we enjoy the strong cheeses. This is easy to make and full of flavor.

This might seem odd to Italians but it works beautifully: the starchy rice, the sharp Cheddar, both are the perfect counterpoint for each other. I make this on days when I need to escape to the kitchen and have a good, quiet, relaxing and mindless 20 minutes staring into the middle distance and stirring. I heartily recommend it.
