CREAMY KALE + CASHEW PESTO CABBAGE 🥬 written recipe below 👇🏾
-1 savoy cabbage -few tbsp olive oil -big pinch of salt -big handful of kale -1/2 cup cashews -juice of 1 lemon -1/2 garlic clove -1/4 olive oil -few tbsp nutritional yeast -pinch of salt n pepper -1/2 cup tahini -few tbsp olive oil -juice of 1 lemon -pinch of salt n pepper -crispy onions, few pine nuts and chilli oil. -cut the cabbage into quarters, rub oil and salt over each quarter then roast in the over for 30 mins \@ 180° -using the blend function on your hand blender, blend the kale, garlic and cashews then blend until broken down into small chunks then add the lemon juice, olive oil and salt n pepper then blend into a smooth pesto. -evenly spread the pesto over the charred cabbage quarters. -now, using the whisk function whip up the tahini, lemon juice and oil 🎥@jacobking

Autumn Squash Soup (Panera Bread Copy Cat)
3 Tbsp olive oil 1 medium butternut squash, peeled and diced 3 carrots, diced 1 onion, diced 1 Tbsp. Brown sugar 1/2 tsp. Salt (optional, I did not add salt) 1/4 tsp. Curry powder 1/4 tsp. Nutmeg 1/8 tsp. Cinnamon 1/8 tsp. Cayenne pepper 1/2 cup pumpkin purée (I used organic canned from Whole Foods) 1 cup apple juice (I used homemade) 3 cups vegetable broth 1/2 cup coconut cream . . 1. Heat oil in a soup pot over medium heat. 3. Add squash, carrots, and onion and cook about 10-15minutes 4. Add brown sugar, curry powder, nutmeg, cinnamon, and cayenne. 6. Add pumpkin, apple juice, cream and broth. 7. Cook 20-25 minutes 8. Portion soup and blend until soft or purée using a hand-held immersion blender/stick blender 9. Enjoy with pumpkin seeds and bread
