2 ripe bananas mashed 250g plain flour 2 tsp baking powder 100g sugar 100ml oil - ( sunflower/vegetable/olive oil) 2 large eggs 180g greek or plain yoghourt 80g choc chips - plus extra to sprinkle on top Step 1: Preheat the oven 170c. Line a muffin tin with paper cases. Step 2: Peel and mash the bananas. Step 3: Measure the flour, baking powder, sugar and sieve it into a mixing bowl. Step 4: In a jug whisk together the oil, yoghurt and 2 eggs. Pour into the mixing bowl along with the mashed banana. Add the chocolate chips and gently mix to combine. Step 5: Scoop into the paper cases, sprinkle on an extra few chocolate chips. Bake for 25-28 minutes until golden.
