I used regular bone-in, skin-on chicken but use what you have. I just eyeball it but I'm going to try to get some measurements for you guys. One cup of white vinegar, three/ 4 cup of brown sugar, one heaping spoonful of cornstarch, approximately a/ 4 cup of honey, couple of good dashes of Worcester Sour Sauce, several dashes of soy sauce, twice as much as the approximately a quarter cup of ketchup, whisk and taste The little taste has determined that I need a little more honey approximately that much as well as a little more ketchup that much. Whisk and taste again. Now, that's perfectly what I'm looking for. Any type of chicken will do for this recipe. I'm using eight boneless skinless chicken thighs and eight chicken tenderloins because that was the oldest I found in my freezer that wasn't vacuum sealed. Our working station is set up, egg wash, cornstarch, chicken diced and ready to go, hot skillet to place the chicken into, followed by the pan, a go into the oven with. Each bowl, the chicken, egg wash, and cornstarch all have their own spoon so I shouldn't have to touch anything with my hands anymore. First, the chicken goes into the egg wash then into the cornstarch. It leaves the cornstarch and goes into the hot skillet. This process will continue to get repeated until all of the chicken is done and into the skillet. Just a few minutes on each side in the pan. We're not actually cooking them here. We just want to get a little crust on each side Once you get your desired crust transfer to a baking pan, add some more chicken to your skillet and continue this process until all your chicken is in the baking pan. Once all of your chicken has been crusted to satisfaction and is all in your casserole dish, go ahead and pour the sweet and sour sauce right on top. In the oven on covered at 375 for approximately 45 minutes. Give them a turn at least once during that cooking time. Here is the finished product. We like to this one with our favorite fried rice.
