See our profile and visit our website💝 Accordion Potatoes Serves: 2 Time: Way too long 😅 Ingredients: 4 large potatoes 2 tbsp olive oil Generous amount of sea salt & freshly cracked black pepper 1/2 tsp smoked paprika 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp oregano 1/2 tsp dried rosemary Fresh parsley to serve Method: 1. Preheat your oven to 200°C fan forced. Peel your potatoes, then slice off the tops and bottoms followed by the sides to create flat edges. Slice down lengthways to create 3 even thick pieces. 2. Place between a pair of wooden chopsticks and slice vertically. Flip then slice diagonally. Repeat with all the potato slices then place onto a lined baking tray

It’s a great way to use up whatever veggies you have maybe at the end of the week or cleaning out the fridge it works for just about any vegetable. 🍃Easy Veggie Pancakes🍃#plantprotein INGREDIENTS: 1/4 of small sweet onion . Sliced thinly 1/2 cup red cabbage , shredded 1 carrot, shredded 1 green onion, chopped 1/2 tablespoon garlic granules 1/2 tablespoon onion granules 1/4 tablespoon ginger ground 1 tablespoon coconut aminos 2 rice paper wrappers Sesame oil Water Dipping sauce; 1 tablespoon tamari 1 teaspoons sriracha or chili crunch Splash of lime juice Sesame seeds Heat a frying pan over medium high heat. Add the oil and place one of the rice paper wrappers in the pan. Top with veggies and spread them out . Place the other wrapper on top, . I added a couple of drops of water around the edges, of the pan and then placed a cover over it. Let it cook / steam for a few minutes until the top wrapper softens a bit and stays to cling to the veggies/ other wrapper. Remove the cover , continue to cook until the bottom is crunchy and golden, flip and cook the other side until golden . So, for a mystery guest, I've no idea what they like. I'm going to try something really safe. Everybody loves this. So, the first thing I'm going to do is make the crust for the chicken. I'm going to do cup of flour, teaspoon of pepper, and a teaspoon of salt. So, mix that all together. So, it's going to be flour, egg, and bread crumbs. I need 2 eggs. About a tablespoon of water. Just going to beat this together. And then the bread crumbs. I need a cup of bread crumbs. I use seasoned bread crumbs. You don't have to make your own. Make sure they're fresh though. They haven't been sitting in the pantry for a long time and Parmesan cheese which is why it's Parmesan chicken. So, for the Parmesan, I'm just going to use actually ground Parmesan and for this, it has to be very finely ground so that it distributes itself really well on that crust. So, I'm just going to chop this up Put it in the food processor and I just grind it up. How fast is that? I just need a half a cup. Right into the bread crumbs. So, I'm just going to mix that together. Now, for the chicken and you pound it. So, it's tenderized and it's actually very even. So, this is time for rolling pin. Just going to pat it really thin. Okay, that's done. Time to cook the chicken. Tablespoon of butter, tablespoon of olive oil, and I'm going to take each chicken breast Chris tip it in the flour. Make sure it's completely coated. Shake it off. Dip it in the egg in water. And then dip it in the breadcrumbs and Parmesan cheese. Okay. Right into the pan. I'm going to cook it for about two to three minutes on each side. Okay, this is nice and brown on this side. I'm just going to turn it over. Oh, is that look good? Okay. Perfect. Browned on that side and you can tell if the chicken bounces back, it's perfectly done. Onto the sheet pan. Okay, into the oven, very low oven, 200 degrees and let us stay warm until we're ready for dinner. Well, that's a crowd. I don't want to leave for too long. So, I'm glad I did the Parmesan chicken in advance. So, the first thing I'm going to do is make lemon vinaigrette. I need quarter of a cup of fresh lemon juice, and that's it. Half a cup of olive oil. Half a teaspoon of salt, half a teaspoon of pepper, and just whisk it. Nicely washed lettuce glad I washed it in advance just pour the vinaigrette on and that's going to go in the chicken so the hot chicken and the cold salad just a great combination All I have to do is plate up the chicken, cold salad on the top, shaving a Parmesan, and I'm back for the fun.
