Seafood Gumbo for Fat Tuesday
Celebrate Fat Tuesday with a Perfect Roux • ½ stick (4 tablespoons) butter • ¾ cup vegetable oil • 1 cup all-purpose flour In a large dutch oven set over medium heat, melt butter. Add in vegetable oil and stir until heated, about 2 minutes. Use a wooden spoon to stir in flour, ½ cup at a time. Continue stirring, reducing heat to low, as needed. Stir and cook for at least 30 minutes, up to 45 minutes, until a deep caramel color is reached. It’s crucial to not step away, as roux can easily burn and you’ll be stuck starting from scratch. Once you have a solid roux, you can build your gumbo right into the pot, starting with the Holy Trinity – diced green pepper, onion and celery. The roux will continue to darken a bit as your gumbo cooks.
Shrimp Gumbo
