Ingredients: 3 1/2 cups self-raising flour (+ extra for dusting) 1 cup thickened cream 1 cup soda water or lemonade Directions: 1. Preheat oven to 180C fan-forced and line a baking tray with baking paper. Set aside. 2. In a large bowl, add all the ingredients and mix well until mostly combined. Don’t over-mix otherwise texture will be dense, rather than light and fluffy. 3. Place dough on a lightly floured surface and knead a few times, just enough to bring the dough together. 4. Gently pat into a flat disk shape, about 6cm thick. Use a scone cutter or the opening of a glass to cut rounds. 5. Place rounds on prepared baking tray, brush with a little milk or egg wash and bake for 15 minutes or until lightly golden. 6. Allow to cool on a wire rack and cover with a clean tea towel to prevent scones from drying out and becoming too crusty. Serve with favourite toppings - ours are chia jam and whipped cream or butter and honey! You can start off with a spoon or rubber spatula then move to hands to get it properly mixed. Once combined, pour into a baking dish and press down firmly to form a base. This will require a bit of work to get it properly compressed. Melt the white chocolate using microwave at 30 second intervals or boiling water under a bowl. Once melted, pour over the slice and smooth out. Place in the fridge for 1 hour. Can keep in or out of the fridge depending on how hot your house is. | Alex’s Kitchen Story

Preheat the oven to 170°C fan bake. Line a 17 x 27cm tin with baking paper. 2. In a large bowl melt butter in the microwave in 30 second bursts. Add the sugar and whisk until combined. 3. Add the vanilla essence, mashed banana, and eggs. Whisk until everything comes together. 4. Sift in the flour and baking powder. Fold everything together and whisk out any lumps.
