SALMON AVOCADO CARPACCIO
10min · 4 servings Ingredients (3-4 servings) • 1 sushi grade filet, thinly sliced • 1/2 avocado, thinly sliced • 1/4 shallot, thinly sliced • A handful pomegranate seeds • 1 red chile, thinly sliced • Fresh cilantro • Zest of 1 lemon or lime • Juice of 1/4 to 1/2 lemon or lime • A glug virgin olive oil • Salt and pepper Instructions Layer the salmon and avocado on a serving plate. Top it all off with pomegranate seeds, chile slices, shallots, lemon zest, olive oil, lemon juice, salt and pepper.
