Highly recommend them. And you can cook them up real quickly. First bell pepper. We're going to rough chop it. You know rough dice it. Doesn't have to be nicely diced just like so. You can use any colored bell pepper. Next we're going to do a sweet medium onion. Also we're going to dice it on up. You know large dice. But we're going to saute this so it's going to turn nice and you know tender. Just like that. Next we got bacon around five strips. Cut those down as well. Now carbon steel pan. We're going to preheat it. And the bacon goes in first until it's nice and crispy and all the fat has rendered out of it. So just keep on stirring it you know once in a while. And now once it looks like this then we're going to go ahead and pull it on off of the the pan. Put it in a separate plate. You don't want to leave it in there the whole time otherwise it's going to burn. From here chorizo. This is around eight ounces of beef chorizo. Throw it right in. I think it's yeah it is eight ounces. From there once all that is all rendered out then we're going to throw in our veggies. Combine everything next. Thin sliced beef. Just like that. Throw it right in. And mix it all together. We are going to hit it with some seasoning. I'm using my Chipotle blend. Season it up real good. Just like that. And now we're going to just kind of combine. Once the meat is almost fully browned then we're going to combine it with everything else. Just like you see here. Combine everything. And just keep cooking it down. Everything you want to cook maybe within three or four minutes of each other. And from here we're going to be adding our bacon back in. And then we're going to be adding Oaxaca cheese and queso manchego. So just like so. Bacon goes back in. Combine everything as well. And now from here we're adding about you know a pound of cheese. Just like that into some chunks. Just like so. And then we're going to close up the lid on the grill. Let this melt. Warm up some corn tortillas. So if you like flour whichever ones. And load them on up. This is so good. Highly recommended. So this came out absolutely fantastic. We're going to give it a go.
