Most Sundays I cook up a whole roast chicken to use in dinners and lunches over the week. It saves money and tastes so much better! These only have 6 ingredients, they are ridiculously easy to make and when I say that they taste like a Greggs Chicken Bake...I mean they taste EXACTLY like a Greggs Chicken Bake! We have them with roast potatoes or wedges and some salad and it's a dinner we always look forward to. The recipe for this is below, let me know in the comments what you think! A x Makes 8 bakes 1 onion finely chopped 220g shredded/sliced roast chicken 2 tbsp flour 300ml chicken stock (using a whole stock cube) 70ml milk 2 sheets of ready rolled puff pastry Heat the oven to 190C (fan) Heat a drizzle of oil in a non-stick pan. Add the onion and fry for 5 minutes. Stir in the flour and a drizzle more of oil. Stir on a medium heat for a minute until the flour disappears. Slowly add the chicken stock a little at a time on a medium heat, stirring continuously. Add more stock when it starts to bubble When all the stock is gone, stir in the shredded roast chicken and add the milk Season with salt and pepper. Take off the heat and leave to cool. Cut the sheet of pastry in half lengthways and then into quarters widthways, so you have 8 equal rectangles. Place half the chicken filling on 4 of the pastry rectangles, leaving a gap around the edge. Lay the remaining 4 pastry rectangles over the top of the chicken. Lift the pastry edges towards each other and press them together. Work your way around the join with the prongs of a fork, then trim off any excess. Brush with milk or beaten egg and make some diagonal stripes with a dinner knife - being careful not to cut all the way through! Repeat with the rest of the filling and the other sheet of pastry until you have 8 Bakes. So, what I've got is I've got three boneless chicken breast but first, tenderize them and also to make them even, I'm going to pound them until they get about a half an inch thick. Okay, so that's the chicken and next the marinade. I need two cups of buttermilk. Actually, the acidity in the buttermilk tenderizes the chicken. Okay, that's two cups of buttermilk and I've got a sliced shallot two large cloves of garlic which I'm going to smash which will really bring out the oils and the flavor. Two cloves of garlic, and then one jalapeno, seeds and all, the whole thing. Just put it right into the marinade. Salt and pepper, two teaspoons of salt, and 1 teaspoon of pepper, and just give that a big stir just to get the flavors all mixed in. So that's the marinade now the chicken so what I'm going to do is I'm going to cut this in half they're huge I'm just going to put them in the marinade thing about the marinade is you want to be sure that you marinated for long enough so the flavor gets into the chicken so that's about eight hours but not too long I think more than twenty-four hours it tends to break down a little bit So, I've already got chicken that's been marinated. So, the next thing I want to do is make the coating and that's the really crisp part. So, I've got three and 1/ 2 cups of flour. So, it's four teaspoons of baking powder which is basically one tablespoon plus a teaspoon and what that's going to do is make it really light and crisp. Next is smoked paprika. That's going to season it a lot. Two and a half teaspoons. 1 teaspoon of cayenne pepper. That's going to make it really hot. And 1 teaspoon of celery salt. One tablespoon of salt, kosher salt, and one and a half teaspoons of pepper. I'm just going to stir those together and it's going to make a really kind of light, spicy, crispy coating. Okay, ready to dip the chicken. So, what I'm going to do is I'm going to take each piece of chicken out of the marinade. Let it drip a little bit. Put it in the flour and this is the trick. Put it back in the marinade. And then back in the flour. This is what's going to make the coating so crispy. So now I need a big pot of canola oil about two inches deep and I need it 350 degrees, which is exactly what it is right now. So I'm going to put three pieces in. You don't want to crowd them and do it carefully because it's very hot oil. Cook them for two and a half minutes. Turn them. Let them sizzle away for another two and a half minutes. Okay, time to plate it up. Anybody feel like fried chicken? And I would say that is all American fried chicken. It's the best.
