Of course the cheese was @tillamook my favorite! Ingredients: 1 pack of tortillas 2 cups of beef ( I used up leftover flank steak) 2 cups of cheese 1/2 onion 1/2 bell pepper 4-5 cloves of garlic (minced) 1 teaspoon cumin 1 teaspoon chili powder Salt and pepper to taste 2 tablespoons of oil ( for frying tortillas) Preparation: To a large skillet sauté your peppers and onions with garlic. Add your steak and brown on all sides and seasoned with salt, pepper cumin, and chili powder set aside. To your clean skillet, add your tortilla, cheese and meat mixture, top with another tortilla and brown on both sides until nice and golden and cheese is nicely melted.
