Ingredients: 4 cod fillets 2 tbsp olive oil 1 onion, chopped 3 cloves garlic, minced 2 cups cherry tomatoes, halved 1 can diced tomatoes 1/2 cup basil, chopped 1/4 cup white wine Salt and pepper Lemon wedges Directions: Season cod, cook in oil for 3-4 minutes per side; remove. Sauté onion and garlic, add tomatoes, wine, and basil; simmer. Return cod, heat briefly, and serve with lemon. Kcal: 250 | Servings: 4
