Pita Pizzas
- 6 whole or mini pita bread
- 1 cup pizza sauce (or BBQ sauce, salsa, etc)
- 2 cups cheese shredded mozzarella, sliced mozzarella, crumbled feta, shredded cheddar
- optional toppings pepperoni, sliced mushrooms, olives, cooked sausage, refried beans, leftover pork, chicken, buffalo sauce, spinach, roasted red peppers, Italian seasoning, Greek seasoning, etc
- Preheat oven to 400℉.
- Spread a thin layer (about 1-2 tablespoons) of sauce of choice or refried beans on each pita bread. Top with toppings of choice (pepperoni, olives, cooked chicken, sausage, taco meat, tomatoes, etc) and shredded cheese of choice. Place the assembled pita bread pizzas on a baking sheet.
- Bake for 10 minutes, until the cheese has melted.
- Remove the pita pizzas from the oven and let them rest for 2-3 minutes before slicing and enjoying.

I was wondering if you have ever pre-made these and then froze them to bake later. If so, how would you bake them from frozen? The same time and temp? Thank so much for this.

Hi Tracy! I actually JUST did this a few weeks ago to experiment with. I made assembled the pizzas as desired, then frozen them on a sheet pan lined with parchment paper. Once frozen solid stack them between sheets of parchment paper in a freezer-safe container. Bake at 400 degrees F for 17-20 minutes from frozen or until the cheese has melted.

I am teaching a children's garden program this summer at our historical society. Each year we make pizza at the end of the program. This year I am trying to use recipes that are easy for elementary children to make at home themselves. so the usual home made dough is out of the question, and with more covid safety precautions, I was thinking they each need to make their own using fresh chopped ingredients and herbs from the garden.
This should be perfect! Except I don't have a toaster oven. We will have to use the old 1920's gas oven in the house, but we can get two cookies sheets in at once so it should be fairly efficient, and kids may have toaster ovens at home which would be safer!
