Greek Shrimp with Tomatoes and Feta

Greek shrimp is an easy and healthy recipe made with tender shrimp cooked in a garlicky cherry tomato sauce with feta cheese. This Mediterranean meal is ready in under 30 minutes making it the perfect weeknight dinner!

If you love Greek shrimp recipes, you need to try this one. It's a wonderfully simple and healthy recipe made by poaching tender shrimp in a Greek-flavored garlic and cherry tomato sauce. It's finished with feta cheese, chopped parsley, and lemon zest which really brings together all the Mediterranean flavors.
This is a fantastic weeknight recipe as it comes together in less than half an hour. We usually serve it with a slice of buttered sourdough bread. It's as easy as it gets yet it really completes the meal.
How to make Greek-style shrimp with tomatoes and feta
Greek shrimp is a very simple recipe that you can easily whip up in less than 30 minutes.
- Start by lightly sauteing the onion in olive oil for a couple of minutes.
- Then, add the garlic, cherry tomatoes, honey, Greek seasoning, salt, and chili flakes and cook until the tomatoes burst to create a sauce. This takes about 15 minutes.
- Add the shrimp and cook them for 2-3 minutes. Don't cook them longer than that or they will turn rubbery. Shrimp cook very quickly.
- Now, take the pan off the heat and stir in the feta cheese, chopped parsley, and a little lemon zest.
Ingredients in Greek shrimp
- Olive oil – We prefer to use extra-virgin olive oil.
- Red onion and garlic – You can use yellow onion if that's what you have on hand. A shallot is another nice option.
- Cherry tomatoes – These are the best option for fresh tomatoes year-round. If tomatoes are in season, you can use chop 2-3 large tomatoes instead. In a pinch, a can of tomatoes will work.
- Honey – A little sweetness is key in any tomato sauce.
- Greek Seasoning – We use our own homemade Greek seasoning blend; it's easy to make with just seven pantry-staple spices. You could substitute ½ teaspoon of each dried basil and dried oregano instead.
- Sea salt – If you only have table salt, reduce the amount by half.
- Chili flakes – The heat from these is minimal, but you can omit them if you're sensitive to spice.
- Feta cheese – This staple Greek cheese adds so much flavor to these shrimp.
- Parsley and lemon zest – We finish the Greek shrimp with these two which adds a fresh, bright flavor to the dish.
Variations to try
- Add a cup of pitted kalamata olives.
- In a pinch, use a can of diced tomatoes instead of fresh tomatoes.
- Squeeze some lemon juice over top for a lightly tangy flavor.
- Stir in several handfuls of spinach at the end of cooking.
What to serve with Greek shrimp
Greek shrimp is a wonderfully saucy recipe that almost demands a thick slice of bread to mop up the juices. Some sourdough bread or our no yeast bread with herbs and cheese would be ideal. - 3 tablespoons olive oil
- ½ medium red onion (minced)
- 6 cloves garlic (minced)
- 4 cups cherry tomatoes (cut 1 cup in half and leave the others whole)
- 2 teaspoons honey
- 1 teaspoon Greek seasoning blend (see notes)
- 1 teaspoon sea salt
- ½ teaspoon chili flakes
- 1 ½ lb shrimp
- 4 ounces feta cheese
- ¼ cup chopped parsley
- 1 tablespoon lemon zest
- Heat the olive oil in a large frying pan over medium-high heat. And the onion and saute it until it turns translucent. Stir in the garlic, cherry tomatoes, honey, Greek seasoning, salt, and chili flakes.3 tablespoons olive oil, ½ medium red onion, 6 cloves garlic, 4 cups cherry tomatoes, 2 teaspoons honey, 1 teaspoon Greek seasoning blend, 1 teaspoon sea salt, ½ teaspoon chili flakes
- Heat the sauce until the tomatoes release some of their liquid and start to simmer then lower the heat to medium and continue to cook, uncovered, for 12-15 minutes, until the tomatoes are thick and jammy. Use a wooden spoon to gently squish any whole tomatoes that haven't burst.
- Add the shrimp and stir them into the tomato sauce. Cook the shrimp for 2-3 minutes, just until they turn opaque.1 ½ lb shrimp
- Remove the pan from the heat and stir in the feta cheese, parsley, and lemon zest.4 ounces feta cheese, 1 tablespoon lemon zest, ¼ cup chopped parsley

Sounds interesting. Can I use frozen peeled and cooked shrimp or should I get uncooked ones. Thanks
Uncooked shrimp will work the best in this recipe. But if you have frozen cooked shrimp on hand, you could make them work. You’ll want to thaw them first them only put them into the sauce long enough to warm them up. Hope that helps!

Excellent!! I made it with chicken, sautéing the chicken ahead of time until not quiet done. Add it to the tomato sauce for the last few minutes, then add the feta.
