Pan tostado con queso curado de cabrá, solomillo de atún rojo cocido, un poco de mayonesa y lechuga fresca

Ingredientes
• 45ml A, oliva o mantequilla
• 1/2puerro o cebolla picad@
• 40gr harina
• 250ml Caldo de cocido /puchero
• 100ml leche
• Pizca de nuez moscada
• Carne picada del cocido o puchero(pollo y ternera en mi caso)
• Harina (cantidad suficiente para pasar las croquetas)
• 2 huevos
• Pan rallado para empanar

Elaboración
• Freír el puerro o la cebolla muy picad@s
• Añadir la harina y hacer un poco
• Mezclar la leche con el caldo y la nuez moscada y calentar
• Añadir a la mezcla anterior (rus) poco a poco , intentando que no salgan grumos
• Cuando se despegue y tenga la textura deseada añadimos la carne picada
• Dejamos reposar y cubrimos con film , unas 2 horas en la nevera
• Damos forma a las croquetas
• Enfriar de nuevo si es necesario antes
