Ingredients: ▪️120 grams of egg whites (from 4 eggs) ▪️50 grams of powdered sugar ▪️Syrup for flavoring Syrup: ▪️250 grams of sugar ▪️80 grams of boiling water ▪️1 gram of citric acid Instructions: 1️⃣Separate the egg whites from the yolks, add the powdered sugar, and mix at medium speed for 2 minutes. 2️⃣Meanwhile, in a saucepan, combine the sugar and boiling water. Place the saucepan over high heat. Once the syrup starts boiling, reduce the heat slightly and cook without stirring until it reaches 124°C (255°F). 3️⃣Once the syrup starts boiling, beat the egg whites at maximum speed. 4️⃣Pour the syrup (from a bottle) into the whipped egg whites. 5️⃣When the syrup in the saucepan reaches 124°C (255°F), remove the saucepan from the heat. Add the citric acid and stir. Slowly pour the syrup into the egg whites in a thin stream. 6️⃣Continue beating for a few more minutes until the cream starts to cling to the whisk. 7️⃣Let it cool. During the California Gold Rush, lemons were so valuable for preventing scurvy that miners would pay a premium for them. 🍋Lemon Bars ingredients -for the crust 1/2 cup or 113 g unsalted butter, softened 1/4 cup 50 g sugar 1 cup or 120 g all-purpose flour 1/4 teaspoon salt -for the filling 1 1/2 cups or 300g sugar 1/4 cup or 32g all-purpose flour 4 large eggs 2/3 cup or 160ml lemon juice, freshly (about 3-4 lemons) 2 Tbsp lemon zest Powdered sugar, for dusting method - Preheat your oven to 350°F/180 C. Grease then line a 8x4 inch loaf pan with parchment paper, set aside. -Prepare the crust by creaming the softened butter and granulated sugar together until smooth. Add the flour and salt, and mix until just combined. Press the mixture evenly into the bottom of the loaf pan. Bake the crust for about 15-20 minutes, or until it is lightly golden. Remove from the oven and let it cool slightly. -Prepare the lemon filling by rubbing together the sugar and the lemon zest to create aroma. Add in flour then the eggs, lemon juice & zest, and whisk until well combined and smooth. Pour the lemon filling over the slightly cooled crust. -Return pan into the oven and bake the lemon bars for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center. - Allow the lemon bars to cool completely at room temperature, then refrigerate for at least 1 hour to set. - Once chilled, dust the top with powdered sugar before cutting into squares.
