Easy Taco Casserole
This fantastic easy taco casserole recipe is a hassle-free weeknight meal! Even picky eaters will love this one since it's so cheesy and flavorful.
45min · 4 servings     Recipe:  • -400g firm tofu  • Pat dry it and shred with a grater.  • -2 Tbsp soy sauce  • -1 Tbsp oil  • -2 Tsp cumin  • -1 Tsp Paprika  • -salt to taste  • Toss around, spread on a baking sheet and bake at 350F/175C for 30mins (give it a stir every now and then).  • Sauce:  • -1 onion  • -3 cloves garlic  • Fry in some oil until softened.  • -1 Tsp cumin  • -1 Tsp Paprika  • -1/2 Tsp chili powder  • -2 Tbsp tomato paste  • Roast 2-3mins  • -1/3 cup (80ml) pineapple juice   • -1/2 Tbsp soy sauce  • Stir it in and bring to a bubble.  • Then reduce the heat and stir in the baked tofu.  • “Salsa verde”:  • -a bunch cilantro or parsley  • -2 cloves garlic  • -4 Tbsp vegan yogurt   • -4 Tbsp vegan mayo  • -1/2 lemon  • -1 Tsp cumin  • -1 Tsp agave  • -salt to taste  • Ble

Check her out INGREDIENTS: (for 200-250 g pasta) - 3 small / 1 1/2 large avocados - 1/2 c basil - 2 garlic cloves - 1 tbsp nutritional yeast - 1 tbsp olive oil - juice from 1/2 a lemon - salt & pepper - 1/2 cup pasta water INSTRUCTIONS: Make the pasta like suggested on the package. When the pasta is ready take 1/2 cup of the pasta water and keep for later. Strain the pasta and set aside. In the meantime make the sauce by blending all the ingredients (including the pasta water) until very smooth and creamy. Add the sauce into the pot with the pasta and mix to combine. It’s day 3 of my salad series and I have a treat for you. 🥗Today I’m making mango salad! This is a sweet and tangy salad that goes perfectly with salmon, chicken or beef for a satisfying and healthy meal. And it’s so easy to make. All you need to do is chop up some fresh mango, cucumber, red bell pepper, avocado, red onion and cilantro/corriander. Then season with salt and pepper, drizzle some olive oil and squeeze some lime juice over everything. Toss it well and enjoy! 🥭
