Sweater Weather Series Episode 1: Italian Hot Chocolate ☕️

Hot Cocoa Pre-Mix
1/2 cup sugar
1/2 cup sifted cocoa powder
1/3 cup cornflour
1/4 tsp salt
1/2 tsp cinnamon powder (optional)

- Mix all the ingredients and store in a clean, dry jar on the counter for 4 months. Or in the freezer for up to 1 year

Hot Chocolate
1 cup milk (245 ml)
40 g finely chopped dark chocolate (I used 70%)
2.5 to 3 tbsp hot chocolate pre mix

- in a pot add the premix along with a little bit of milk. Whisk till smooth & well combined
- Add the remaining milk and whisk together. Add in the chopped chocolate
- Cook on medium heat till smooth, thick and velvety (keep consistency as you like it)
- Serve hot with whipped cre

Ingredients
10 large prawns with tail (cleaned)
1/4 cup + 2 tbsp extra virgin olive oil
3 button chillies
3 large cloves garlic thinly sliced
1/2 tsp salt
1/4 tsp hot paprika (or use regular)
1/2 tsp regular paprika
1/2 tsp chilli flakes
Juice of 1/2 lemon
3 tbsp chopped parsley
Crusty bread for serving

* in a pan add the olive oil, button chillies and garlic. Keep the flame LOW otherwise the garlic will burn
* Add all the spices and mix well
* Now add in the prawns and cook for only one minute per side
* Squeeze the lemon juice on top and all the parsley
* Serve immediately with some crusty bread for dipping

Ingredients
300 g dried apricot
1 litre water
200 g sugar
1 tsp vanilla essence
Few strands saffron
1/2 tsp orange food colour (optional)

- Wash the apricots well and then soak in 1 litre water overnight
- In the morning remove the seeds from the apricots. Reserve the apricot water
- Crush the seeds to remove the almonds. Set aside
- Add the apricots, apricot water and sugar in a pan and cook for 30 minutes covered on low flame till the apricots are completely tender
- Mash the apricots if desired
- Add the vanilla, food colour, saffron and almonds. Mix well
- Chill completely and serve with custard, cream or ice cream
