I have shared poori recipe along with tips to get perfect fluffy poori. Poori or Puri is a kind of flat bread which is made with whole wheat flour and deep fried. Poori is my favorite especially Poori masala…who doesn’t ?!

About Poori
Poori is a popular Indian deep fried bread made using available ingredients in your kitchen. Poori Masala is one of the popular dishes in most hotels. Making poori is easy and I have shared the tips for beginners to get perfect poori.
I make poori rarely at home as mostly it is chapati. But make mini pooris for mittu, gugu for their lunchbox whenever we make chapati for us. As both kids are also fond of poori made at home.
I am like if you give me poori daily I can have it I love it so much. It was really a tough time clicking the pooris puffed up but guess have done justice to it. Though my fav combination is poori with chana orc hole masala , hubby likes poori masala.

Poori Ingredients
- Wheat Flour – Whole wheat flour or even multigrain flour can be used. You can store bought wheat flour or homemade.
- Salt – Salt is added to the flour for taste to make the dough ready.
- Water – Water is added to make the dough.
- Oil – Oil is needed to deep fry the pooris.
How to make Poori Step by Step
1.To a bowl add wheat flour, rava(soaked in water for 10 minutes) and salt together and mix well to combine. Add water little by little to gather to form a stiff dough, first it will have cracks. Knead again to form a smooth dough.
2.Separate into equal lemon sized balls(or slightly smaller).Take a ball and roll it out with rolling pin making sure the thickness is even. Don’t roll it very thin like we do for roti/chapati , it should a bit thicker.
3.Heat oil, carefully drop the pooris one after another(depends on your kadai size too).Once it is completely immersed in oil press gently with your spatula in the middle, continue pressing until the poori puffs up on all sides. Turn the other side, once it turns golden brown, remove and drain.
Serve hot fluffy pooris with aloo masala / chole masala!
Expert Tips
- Make sure the kadai is filled with oil enough for the pooris to immerse.
- Also oil should be hot for the puris to puff nicely. May be pinch a small piece and drop it in oil to check, it it raises immediately the oil is hot enough else heat the oil for few more mins.
- Also adding rava to the wheat flour gives nice crisp pooris like in hotels.
- Adjust the flame to medium high for the oil to heat up first then lower the flame to medium.
Serving and Storage
Serve pooris hot! Poori is best to serve with potato masala however tastes great with chana masala too.

@Anonymous : It depends on the dough kneading and while frying make sure to press in the middle of the pooris will will surely puff up the pooris

You can sprinkle dry gram flour itself so that it does not form lumps…Alternatively you can mix with water and also add. Hope this helps!

i heard tat for 1 cup wheat, 1 cup maida ,1 tsp sooji is the combination.i plan to do tomorrow morning. pls say 2 cup wheat works out well than my suggestion

@Rekha : We usually make poori with wheat flour only. Only for maida poori(channa batura) we add maida. I havent tried half and half with it…but guess it will turn out good only.

One tip for pooris is to remain fluffed for longer is to add half a tsp sugar along with salt (to taste).
