This copycat recipe of the famous Gordon-Biersch garlic fries couldn’t be easier to make at home, and because they can be baked in the oven or the air fryer, they’re a healthier version, too.

Oven Baked Garlic Fries
At first I didn’t even see them. I could just smell them. The punch to my olfactory sense with their intoxicating aroma literally had me twisting in my seat, cranking my head like Linda Blair in the Exorcist, searching for where that heavenly scent was coming from.
Ahhh, garlic. And loads of it. It was like the perfume of the food Gods.
This was many years ago at an L.A. Lakers game, and someone a row behind me and a few seats down was busy digging into what I soon discovered as the famous Gordon-Biersch garlic fries.
I’d never even heard of Gordon-Biersch before, but that certainly didn’t stop me from seeking out the concession stand where my husband and I joyfully purchased a few frosty beverages and our first batch of garlic fries that what would later become our Laker-game-going ritual.
But the best part of this story is that you don’t need to wait ’til game day to make this copycat recipe for Gordon-Biersch garlic fries at home. And even better, I’ve made them healthier by skipping the deep fat fryer and added even more flavor with a hint of fresh, herby rosemary, because that’s just the way I do.
Garlic Fries with Frozen Fries
When Alexia Foods asked me to create a recipe using Alexia House Cut Frozen Fries, I really didn’t have to go to far down the recipe development path before lighting upon this garlic lovers recipe, and here’s why:
They’re so easy to make. Using Alexia Foods frozen fries makes it easy to create on a whim for a snack or appetizer. By keeping a bag on hand in the freezer and then adding staples I pretty much always have on hand (oil, garlic, herbs, salt and pepper) I can have these babies ready to devour in 20 minutes.
They’re healthier. I’m the first one to say that there’s nothing quite like the taste of deep fried french fries. But there’s also nothing quite like the calories frying can add to a meal.
But with these fries there’s no need for deep fat frying. Alexia has figured out how to make a frozen fry go into the oven and come out crispy on the outside and tender on the inside. No limp, soggy, baked fries here.
I’ve made these garlic fries in both the air fryer and in the oven and they turn out equally good every time and are cooked in just 15-20 minutes. Plus, Alexia’s fries are made with just 5 simple ingredients that you can actually read and recognize, with minimal processing and 0 grams trans fat.
Garlic is for lovers. These fries are not for the faint of heart. This garlic fries recipe uses real, raw garlic—not garlic powder or garlic salt—to give its signature, intense garlic flavor. Instead of mincing the garlic for these fries, I use my favorite garlic press to create a creamier garlic paste, avoiding the sharp bitter bites of raw garlic bits.
What’s in These Garlic Fries?
Whether you’re cooking the frozen french fries in the air fryer or the oven, the ingredients for these killer garlic fries are the same:
- Alexia House Cut Fries with Sea Salt
- Canola oil
- Garlic
- Fresh rosemary
- Fresh parsley
- Kosher salt and pepper
How to Make Garlic Fries in the Oven
After pressing the garlic, I combine it with a neutral flavored oil like canola, vegetable or grapeseed oil, kosher salt and the minced rosemary. I’ll usually let this sit for at leasts 20 minutes, but the longer the garlic and rosemary infuse, the more flavor the mixture imparts.
Once the fries come out of the oven, it’s time to work fast. Quickly transfer the hot fries to a large bowl and add the infused garlic oil to the fries. You can start by adding half of the mixture, but if you’re like me, you’ll end up dumping the whole amount on anyway and never have anyone question why. Season with salt and pepper and then add parsley and more rosemary if desired.
Toss well, pile high on a platter or plate, and serve on their own or with fry sauce. Just make sure the one you love is eating them with you, because this is proof that garlic fries are for lovers.
How to Make Air Fryer Frozen French Fries
To make these garlic fries in the air fryer, simply cook the fries in the air fryer at 400°F for 15-20 minutes and then toss with the garlic and oil mixture as directed above. Easy as that!

Can I Prep Garlic Fries in Advance?
You can whisk together the garlic oil mixture ahead of time and keep it in the fridge until you’re ready to use it. But the fries are best enjoyed fresh from the oven, so wait until you’re ready to eat to bake them.
Tips for Making the Best Garlic Fries
To make cleanup even easier, I line my baking sheet with aluminum foil. All I have to do is dump the crispy fries into a bowl or serving platter, throw away the foil, and dig in.
I don’t recommend using olive oil in place of canola oil in this recipe since it has a much stronger flavor. A neutral flavored oil like canola is ideal for these oven baked french fries.
Also note that I’ve only ever made these homemade garlic fries with the house cut fries. I’m sure you could use frozen waffle fries or another fry shape instead, but you may have to play around with the recipe a bit.

Killer Garlic Fries with Rosemary
- 1 28 ounce bag Alexia House Cut Fries with Sea Salt
- ⅓ cup canola oil
- ¼ cup pressed garlic
- 1 tablespoon minced fresh rosemary
- 1 tablespoon minced parsley
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- Preheat the oven to 400°F.
- Spread the fries evenly on a baking sheet and bake for 15-20 minutes or until crisp, stirring halfway during cooking.
- While the fries are baking, mix the canola oil with the garlic and rosemary and ½ teaspoon of the kosher salt. (This step can be done ahead of time.)
- Remove the fries from the oven and transfer to a large bowl with the garlic, rosemary and oil mixture and season with the remaining kosher salt and ground pepper. Toss well with tongs until combined and serve immediately.

It looks like fry sauce, which is mayo or miracle whip and ketchup mixed to taste. It’s darker pink because it has more ketchup. What I’ve always done, is to put the ketchup in spurts and then mix with a fork. Add more until you’re happy with the taste.
Sometimes people will add other things for flavor adjustments, but that’s the basic.
