For the flatbreads

1 tsp rapeseed oil
90g wholemeal flour, plus extra for dusting

For the scramble

160g baby spinach3 large eggs1 tbsp chopped dill, plus extra1 tsp rapeseed oil1 ½ tsp capers, drained and chopped100g skinless wild salmon, cut into small pieces
