As is the full-time mom to a daughter who has Aicardi-Goutières, a rare genetic disorder that effects the nervous system and requires a highly specific diet, Dev Amadeo knows free time is a precious resource to devote to a true nourishing passion. What started as a necessary crash course in nutrition became a full-on obsession for Dev, particularly in the form of baking. Her blog, Plum, became an essential creative outlet for her to share some of her joy with the outside world, not just within her family. Each of her recipes is formulated with the busy, multitasking parent in mind. “I’m inspired by my own needs, because I found that when I wanted to bake, there weren’t the cometogether-in-15-minutes options I needed,” she notes. Enter her many customizable cheesecakes, a breezy lemon curd tart with chocolate press-in crust, and soft, decadent Sponge Hazelnut Brownies. These are recipes for the caregiver, by the caregiver. And Dev loves to leave wiggle room for creativity within her recipes. “I love it when people say, ‘I took your recipe and did the exact opposite,’” Dev says. For her, it’s the ultimate compliment for a baking blogger, emboldening your followers to go off script. “If I can do it for just one person, it’s totally worth it.”
