How to make the creamy chicken breast:

1. Thoroughly season chicken breasts with salt, pepper, and 1/2 teaspoon oregano on both sides.

2. In a large skillet, melt 2 tablespoons of butter with a bit of oil from the sun-dried tomatoes over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side until browned. Once done and no longer pink, transfer grilled chicken breasts to a plate and set aside.

Slowly add chicken broth, heavy cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper.

Tips for the creamy chicken breast recipe

  • Remove chicken breasts from the refrigerator about 15 minutes before cooking to bring them close to room temperature.
  • Season chicken just before cooking to prevent drawing out moisture and drying out the meat.
  • If you have large chicken breasts, pound them or slice them horizontally to even out the thickness. This will cook the chicken faster.
  • You can substitute crispy bacon for sun-dried tomatoes for a nice flavor.
  • For a variant of this creamy chicken breasts recipe, you can use chicken tenders instead of chicken breasts. They’re delicious and cook faster! Just keep an eye on them so they don’t overcook.

What other readers say about this creamy spinach chicken breast recipe

“This is amazing!! Winner in our house! The sauce is so delicious, cannot say enough good things about it. I have given the recipe to all my friends. Thank you!” – Nichole

“Really delicious! I substituted the half and half with Coffeemates natural bliss half and half (almond and coconut) and used thin chicken breasts. First time trying a dairy-free half and half and it was definitely a win!” – Leah

‘This is one of the tastiest and easiest recipes I’ve made in a long time. Served with a spinach salad with tangy mustard dressing, walnuts and apple” – Anel

“Delicious! I used chicken thighs since that’s what I had added mushrooms and substituted fresh cherry tomatoes for sun dried” – Susan

“Followed recipe just added 3 tablespoons of pasta water to onion mixture to soften it. Tasted really good will make again” – Kelly

“Good, very rich and customizable. […] Served over rice, but this could go on anything. I had large chicken breasts, so doubled sauce, cooked chicken longer, added more spinach, a few chopped artichoke hearts, and sliced mushrooms. Some substitutions that I did are using grated Parmesan, Romano & Asiago cheese blend, Tuscan seasoning blend, and chicken bone broth. I bet corn and zucchini would be good additions.” – Tanya

How and how long to keep the creamy chicken leftovers?

You can keep the creamy chicken with spinach for up to 2 days in your refrigerator, using an airtight container. Reheat the chicken gently in a skillet with a few drops of water to loosen the sauce.

Looked up chicken recipes on Pinterest this morning and made this for dinner tonight! Wonderful! Hubby loved! I did pound chicken thin for even cooking. I tripled this. Used 1 c whipping cream and 1/2 c evaporated milk to make it “healthier”! Thanks for a yummy new chicken receipt!

This was so creamy with delicious flavor. I put the sauce [without most of the spinach] into the food processor real quick to make it smooth. This will be in our regular dinner recipe rotation!

No leftovers tonight! Paired with mashed potatoes and buttered peas. Poured sauce over potatoes. Loved the zing of the sun dried tomatoes. Definitely a keeper!

  • Danielle

    2023-07-21 21:16:52

I used this recipe for the sauce and spinach aspects. Instead of sundried tomatos, I use red or yellow bell pepper and toss in grape tomatos. I cut the chicken into chunks and added pasta (rigatoni or tortellini, so far). Delicious!

  • Maria

    2023-06-18 18:11:16

Made it today! I absolutely loved it even my daughter liked it. The only thing was for me I think one small jar of sun dried tomatoes is to much next time I’ll put less.

  • Ann

    2023-06-08 06:42:59

Delicious delicious delicious Used chargrilled capsicum strips instead of sundried tomatoes so I didn’t need to go to the supermarket. Also added a squeeze of lemon to the sauce at the end. Served with hasselback potatoes, roasted cauliflower and carrots.

  • Inga

    2023-06-04 20:40:50

As soon as I put the spinach the cream cut and turned into water, what did I do wrong???? Also the cheese got all stuck at bottom of the pan. Something I must have done wrong. Any helpful advise?? The dish Is so flavorful my family loved it anyways.

One of the best dishes I've ever made! I didn't have oregano, so I substituted Mrs. Dash Chicken Grilling Blend. Delicious!

  • Steph

    2023-03-12 16:08:48

This recipe was absolutely delicious, we doubled the amount of chicken but left the sauce the same way and it came out perfect, my kids wanted more(and so did the husband)!

  • Pamela

    2023-02-27 23:23:12

It was good, I added some wine, a little cayenne pepper, and used already chopped sun-dried tomatoes in olive oil, kinda made it my own, and served over rice.

    2023-01-17 19:54:38

I really liked this except for 2 things. My chicken took WAY longer than 4 minutes per side. Lol and my sauce wasn't very thick. Would have rathered it be creamier. I even add more parmesan. Any suggestions on how to do that?

  • Dana

    2022-10-16 21:32:55

Had company for dinner tonight and tried this recipe. I received so many compliments on it. It was so easy to put together and I believe you cannot go wrong with it. You can adjust the taste to your preference. I used red bell peppers because I do not like sundried tomato (or bacon). I served it with rice and portobello mushrooms, but it would have been great with pasta too. It is also very quick to put together, This is my new go-to meal for entertaining. Thanks for this amazing recipe.

  • Robin

    2022-10-13 17:41:47

This is a great, versatile recipe. Honestly I have even dumped all the ingredients in a dish and baked it. Sauce wasn't as creamy as it could be but it was still delicious and so easy. Going to try it in the instant pot next, stirring in parm once it's done.

  • Carolyn

    2022-10-10 10:54:35

I make this all the time and like most that have commented I have made a few changes over the years to satisfy our tastes. All good cooks do this! First of all the sun dried tomatoes are a must - they brighten the dish but I don’t use as much as this recipe and I chop them a little so as not to get large chunks while eating. I also chop up some bacon and cook with the onion. I prefer to use Sherry for deglazing the pan instead of chicken stock. It thickens nicely as it cooks down and I usually add more cheese to the sauce. By the way, did you know, if you grate your own cheese and let it reach room temperature before adding you won’t have to deal with curdled cheese? The one thing I saw on this thread that I’ll try next time is the addition of artichoke! Never thought of that!

  • Anna

    2022-08-10 10:22:53

This looks amazing and I’ll be trying it tonight! I have dried sun dried tomatoes in a container, will those work fine for this recipe? Thanks!

  • Pam

    2022-08-09 19:05:25

Delish. I made it with a rotisserie chicken. Added the delicious juices plus cayenne and 2 T of cream cheese to thicken the sauce. Added zucchini noodles to the pan after seasoning them with Adobe and drying with paper towels. Yum!

  • Renee

    2022-06-23 23:34:06

This recipe was GREAT and I’ll definitely be making it again. I changed nothing, but had some mushrooms I thinly sliced and they added some flavor. Highly recommend this dish!!

    2022-05-21 16:58:11

This is my favorite. I make it 2 or 3 times a month. I've served it over rice and pasta. I like to sub in roasted red peppers in place of the sun dried tomatoes.

  • Michelle

    2022-04-21 02:49:23

Very tasty. Will make again. Sauce a little thin so will reduce liquid slightly next time.

  • Gaetana

This is excellent! Although it looks relatively simple in print, the ingredient amounts are perfect and create something spectacular. My daughter declared it one of her top three meals of all time. Used fresh chopped tomatoes because I didn't have sun-dried. Served it over pasta. I will definitely make this again.

This recipe is to die for. Its as good as, if not better than what you would get served in a restaurant. I have 4 kids and they absolutely loved it. It was a huge hit with our family. This recipe I will definitely make again. I served it with roasted baby potatoes, and I doubled the sauce part of the recipe. P.S. Your house will smell divine while you are cooking. ;)

    2021-12-06 17:45:11

I loved it the first time a made it but the second time, I changed it up with bacon, garlic sauce, leftover turkey and used turkey broth. This was a very tasty and a great way to use up the holiday leftovers. My husband likes it over rice but I liked it with biscuits.

    2021-11-07 09:41:43

Great recipe, I made it the first time with the sun-dried tomatoes, but ended up picking them out. The second I made it without and tweaked it a little adding more cream and broth. Served with rice or mashed potatoes.

  • Cathy

    2021-11-03 20:30:40

This was okay. The sun-dried tomatoes overpowered the dish. Next time (assuming husband will let me try again), I will double the cream and broth and cut the tomatoes way back.

This is DELICIOUS!! Made this for my family last night and we loved it. I only used 5 sun dried tomatoes and added mushrooms... also do not skip mincing/grating the onion, it just melts into the sauce. Will definately be making this again soon.

  • Sandra

    2021-08-23 19:39:58

This dish had great potential, however, I made the mistake of using the Costco brand sun-dried tomatoes. The Bella Sun Luci brand was so bitter, it ruined the dish. I usually adore sun-dried tomatoes, and this was a brand new jar, but this jar will be going in the trash. I will make again with another brand of tomatoes. I did measure everything according to the recipe.

Made this last night. It was excellent and the whole family loved it. I cut down on the sun dried tomatoes quite a bit because my husband isn't a fan of their flavor. But I still added some and I used the oil which I think was key. This is a keeper!

I have made this recipe too many times to count. I’m making it now, but the time on cooking breasts is entirely wrong. I would suggest cutting the breasts in half to cook at that time, otherwise your chicken is raw inside.

Made this tonight; double batch of the chicken using chicken tenders, omitted the tomatoes because I have whiners in the house. Made a half batch at the same time, used sea scallops instead of chicken and veggie broth instead of chicken; I'm pescatarian. Both were fantastic and I can't wait to make them again!

My whole family loved this dish. I actually ended up making it at the last minute instead of slow cooking it. Which took about 30 minutes. Easy Peasy. I served it with Cauliflower Breadsticks I found in the frozen section of the market, which was great for dipping in the sauce.

Made this recipe for dinner tonight, and really enjoyed it! It was pretty easy to make and tasted yummy. I do wish that the instructions told a specific amount of time for cooking the onions/garlic/tomatoes, I cooked them for maybe 3-5 minutes and that seemed to be fine.
