What is Samp?

Samp is a traditional South African dish made from dried corn kernels which have been stamped and chopped until broken but not as fine as maize meal. It is often served with beans and meat, but can also be enjoyed on its own as a vegetarian meal.

Ingredients:

  • 1 cup of samp
  • 3 cups of water
  • 2 tablespoons of butter
  • Salt, to taste

Instructions:

  1. Soak the samp in water overnight, or for at least 6 hours. This will help soften the samp and reduce cooking time.
  2. Drain the samp, add 3 cups of fresh water to a large pot, and bring to a boil.
  3. Lower the heat and let the samp simmer for approximately 90 minutes, stirring occasionally. If the water gets too low, add more water. The samp should be tender and the water should be absorbed once done.
  4. Add the butter and salt to the pot and stir until the butter is melted and well distributed.
  5. Cover the pot and let it rest for a few minutes before serving.

Tips:

  • For extra flavor, you can add other seasonings such as garlic, onion or herbs to the pot while cooking.
  • If you prefer a creamier texture, you can add milk or cream to the pot of samp after it is cooked.
  • Samp can also be cooked in a pressure cooker to reduce cooking time.

Health Benefits:

Samp is a good source of fiber, protein, and carbohydrates. It is also low in fat and high in vitamins and minerals such as iron and vitamin B.

So there you have it, a simple and delicious recipe for cooking Samp with butter. Give it a try and let me know how it turns out!
