This paper will be a survey of Canadian toponyms (place names) in the names of omelettes, and an investigation of the reasons for these names. The names will be searched for in cookbooks, menus, and webpages. It is not very difficult to find omelettes named after the country as a whole, i.e. a Canadian omelette. While it seems that some provinces, e.g. Newfoundland, may not have had any omelettes named after them, one can find an Alberta omelette and a B.C. [British Columbia] omelette. At least one territory is named in a omelette, the Yukon omelette. As for names of cities, there is a Montreal omelette, a Toronto omelette, a Vancouver omelette, and a Victoria omelette (the last of these fairly clearly named after the Canadian city, and not the Australia state, since it is served in a Canadian restaurant). As for other types of toponyms, there is a Fraser Valley three egg omelette. As both English and French are official languages of Canada, I will also discuss omelette names in French, e.g. the omelette canadienne. This paper will represent a contribution to culinary onomastics. Keywords: Food Names, Culinary Terminology, Onomastics, Toponyms 1. INTRODUCTION Many foods of different types are named after places or the people who live in those places, e.g. French onion soup. This is true of omelettes, e.g. Spanish omelette. In this paper I will look at omelettes named after Canada and places in it, i.e. provinces and cities. To find these names I have looked at internet sites, including menus, and cookbooks. However, even with the internet, it is not practical to search for all possible names, and not all cookbooks menus are available online, so this paper cannot be taken to be comprehenensive. Nevertheless, I hope that it will give an idea of tendencies regarding names of this type. I might note that I did not notice any such names in two cookbooks specifically about omelettes, Chalmers (1970) and Chamberlain (1984). It is also worth stating that reasons for the names are not given in any of the cases presented here. The 1145 https://bilselkongreleri.com/ 2. DATA AND DISCUSSION 2.1 Omelettes Named after Canada Let us begin with omelettes named after the country Canada. The Fall River Cafe in Maberly, Ontario 1 has a Canadian omelette (It also has a Fall River Omelette Canadian omelette, 2 The Pandora Diner, with two locations in New Jersey, serves a Canadian omelette, which also has bacon, but has one ingredient not used in the Canadian omelettes mentioned previously, asparagus; the full list of what it 3 (This diner has a good number of other omelettes with toponymic names, including an Alaskan omelette, an Athenian omelette, a Brooklyn omelette, a Finland omelette, a Portugal omelette, and a Trenton omelette.) I have found several instances of a Canadian style omelette, e.g. at the Green Apple Cafe of Orangeville, 4 The Stacked Pancake & Breakfast House, a chain which has restaurants in several provinces of Canada, 5 but mainly in Ontario, has a great Canadian omelette French and English are the official languages of Canada, and so one might expect to find French names of omelettes referring to Canada. This is the case; there are several instances of an omelette canadienne, e.g. in anon. (1931:77). 2.2 Omelettes Named after Canadian Provinces and Territories I have not found any instances of a *Newfoundland omelet(te) or a *Prince Edward Island omelet(te). There is a Labrador omelette available at the part of Canada (since this place has omelettes named after other dogs).2 I have found a New Brunswick omelette,3 but, given that the restaurant which serves it is in the US, one might think that it refers to the American city, not the Canadian province. I did not find an *Ontario omelette (or for an *Ontario-style omelette most populous province. (There is an all-Ontario frittata (potato & ham frittata).4) However, the Capitol Garage in Sacramento, California has an Ontario omelet (note the spelling), and one might think that it refers to 5 but there is also an Ontario in California, a city near Los Angeles, which it could conceivably refer to. It also seems difficult to find a Quebec omelette instances which I have seen are in bil 6 However, since French is the majority language of the province, one might think that one would have more success with searches using French terms. 7 -spoonsful of cornflour, half pint milk, two ounces of butter, one teaabout, since the book itself is written in other recipes with French names (e.g. Omelette aux Huitres names (e.g. Omelet with Bacon, p. 67). In the savory version, it is garnished with most vegetables, including potatoes, cheese produced in Canada (cheddar, cheese curds), bacon bits, smoked meat, mushrooms, etc. With sugar, it is flavored with maple syrup, embellished with red fruits, including the inevitable cranberries....2 It may be surprising that the White Sands Beach House in Bali serves an Alberta omelette egg omelette, [with] bacon, mushrooms owners or managers are from Canada or have some connection with it, since there is a Canadian flag in the menu.3 It may also be unexpected that a Nova Scotia omelette is available at Ang Bordentown, New Jersey.4 (The online menu does not give the ingredients.) However, this restaurant serves a wide range of omelettes, with various others also having toponymically-based names, e.g. Bronx omelette, Brooklyn omelette, New Orleans omelette, and Sicilian omelette. Another surprise is that the Cafe Atitlan in San Pedro La Laguna, Guatamala apparently had a Saskatchewan omelette, according to a positive review of it from 2013. 5 I did not find any instances of a *British Columbia omelette, but the Abode Restaurant serves a B.C. 6 omelette In this case it is fairly clear n British Columbia). A Yukon omelette is also available at 4 I have not seen any instances of a *Nunavut omelette or a *Northwest Territories omelette (or an *NWT omelette; NWT is the acronym for Northwest Territories). 2.3 Omelettes Named after Canadian Cities We now turn to omelettes named after cities in Canada. The Skyway Diner in Burlington, Ontario has a Montreal omelette Canadian omelette 5 Oddly enough, a restaurant in New Zealand, the Beach Bistro in Auckland, also serves a Montreal omelette 6 -range eggs & cured akaroa (They also have a dish called Toronto.) In addition, it serves a Niagra [omelette] whether it was named after the Canadian side of Niagra Falls or after Niagra Falls as a whole (i.e. the American and Canadian sides). A Toronto omelette appears in an old cookbook, Fairfield (1988); the recipe for it is as follows (p. 66): Boil a dozen apples, as for sauce; stir in one-fourth pound of butter, one-fourth pound sugar, when cold, add four well-beaten eggs and a few spoonfuls of cream; put it into a baking dish, well buttered, and thickly strewn with currants on top, and bread crumbs on the bottom and sides. Bake three-quarters of an hour; turn on a platter, and sift sugar over it. Serve with boiled custard. Considering the size and importance of Toronto, it is surprising that there are (to my knowledge) only a small number of omelettes named after it. The Lianna Cafe in Panania, New South Wales used to serve a Vancouver omelette; given how far it is from Canada, this might come as a surprise (assuming that it does refer to the Vancouver in Canada). 3 It Vancouver has a Victoria omelette 4 ucchini, mushrooms, peppers, onions and Given its location, it probably refers to the Canadian city rather than the Australian state (or the British queen). This restaurant also serves a Hamilton omelette, which I again suspect refers to the Canadian city rather than the one in New Zealand (or to Alexander Hamilton). (They also serve a Calgary sandwich and a Montreal smoked meat omelette, but the Among the Canadian cities and towns which I did not find any omelettes named after are Banff, Edmonton, Halifax, Sudbury, and Winnipeg. 2.4 Omelettes Named after Other Places in Canada There is a Granby River omelette served by the Granby River Road House in Grand Forks, British 3 A Fraser Valley three egg Sheraton Vancouver Wall Centre Hotel; one may select from among omelette 4 3. CONCLUSION A fair number of omelettes have been named after Canada or places in it, and a fair number of places in Canada figure in names of omelettes.
