Curacha
In the Chavacano language of Zamboanga in the southern Philippines, curacha refers to the spanner crab or red frog crab whose scientific name is Ranina ranina.
A hybrid crustacean — curacha is a cross between a large sea crab and a big spiny lobster. It is a large crab with a red color, which stays the same in color even when cooked.
How to Cook Curacha
You can simply boil or steam the crabs the way you would any regular crabs. In Chavacano cuisine, however, they are made special with the addition of Alavar sauce.
