1. Combine oats, peanut butter, honey (or maple syrup), ground flaxseed (if using), chocolate chips (if using), vanilla extract, and a pinch of salt. 2. Mix until combined. If the mixture seems too sticky, refrigerate for 30 minutes. 3. Roll the mixture into balls, about 1-inch in diameter, using your hands. Then place on parchment paper. 4. Refrigerate for at least 1 hour to firm up. 5. Serve and Enjoy!
